Every shop that puts any kind of noodle(I even have seen someone swap to pho or udon) in any kind of beef soup(stew?) can call themself a "beef noodle soup" shop. Compared to Japanese Ramen, Ramen has an industry-wide accepted framework set a guideline that every ramen will be made with three main parts broth, sauce, and a small subset of noodle. Toppings and other variations will not deviate too far from the core concept. But in Taiwan, unless you have googled some reviews, you won't have the slightest idea what a particular shop will serve you under the name "beef noodle soup" You can only be certain it will contain beef, noodle, and water(yes sometimes the soup is as bland as water).
Never been to NYC, but if I do, I'll *always* know where the best places to eat are. Another killer spotlight from the First We Feast crew. Well done, folks.

Growing up in the Midwest, a lot of westerners would call our foods/ingredients "the devil's foods/ingredients". But see most of them at the local Chinese Buffet.
I think I'll be making a trek to Ho Foods. This looks like a dish best left to the professionals, as it would take me the better part of a week to make at home. I've found complex soups to be some of the least rewarding dishes to cook at home in regards to return on effort investment. The amount of time and energy required is very high and the result isn't better than what you can buy from a decent restaurant. They're really foods best made in huge quantities while you're in the kitchen all day. So unless I'm making a huge batch to freeze or to feed a crowd, and doing it regularly enough to get good at it, this is a food that just makes sense to get from chef who makes it all day. The only soups I make at home now are miso soup, which I can make in half an hour from scratch, and chicken soup occasionally in a huge batch which I freeze in single and double servings. That Ho soup looks delicious and something that took a great deal of effort to make and perfect. I'm looking forward to a bowl.
all i saying i love all cultural food , i've been wanting someone show me the ropes of all noodle soups not only noodle soups but they all look so delicious and amazing , all i've tried so far is pho and i want to try more then that don't get me wrong pho is so good .
I don't know about that. Chinese noodle soups may have been the inspiration, but I feel that Vietnam, Thailand, and Japan have taken noodle soup far further into the realm of deliciousness than China ever has.
You know what the problem is? so many noodle soups that is only known to the local people, not even outside the city or province. Not to mention give it a naming to target western market, these noodle cannot even walk out of the town
I love taiwanese beef noodle soup, but its just so hard to find a good place in Flushing, Queens. My family ends up going out to eat vietnmaese pho all the time cause its pretty good too. Hopefully someone will open a place here in Flushing!

I am a 7 hour drive from NYC, but that pales in comparison to the joy I expect to get from this soup. Up early, drive, eat, drive, return late pm.
