In the scene where she took off Jinx's finger, first, she was a little unstable but stabilised herself and she really was aiming for the hand because after that she literally closed her gun and let Vi take care of Jinx. She only opened her gun again when the kid pointed a gun at Vi which was the best decision otherwise Vi might be dead. I think you need to rewatch the scene. Her whole personality in the first Season is that she is literally the perfect shot!!

Vi just can’t catch a break, ever since her parents died it’s been none stop trauma from her friends and adoptive father dying, getting put in prison for years where she got beaten and abused practically every day, nearly dying herself after getting stabbed, losing her sister and now getting hit and abandoned by the one person she had left in her life and now we know with the trailers that this was the final straw and she’s going to unravel completely and fall into an abyss of depression in the upcoming episodes. I just feel so bad for her.
To be clear: She did not lose her sister - she decided that she didn't want her sister the way she is now. At any point during season 1, she could've said "I'm with you, and I don't care that you're crazy," and patched things up with Jinx - she just couldn't accept the fact that her sister wasn't that innocent little girl she remembered.

Not really, Sevika's thing is loyalty. After almost a decade of serving Silco and being around Jinx they formed a bond, they may not be on the best terms but they're family. With Silco's death it's obvious she would protect Jinx since she did care for them both in her own way.

But in season 2, after their father has passed away, they grow closer, and start to form a healthier sisterly bond, now having to (potentially) raise their own kid together, it's beautiful, really❤
