Mexican food has a lot of vegetables based dishes like guacamole, chilaquiles, nopales, enchilaladas suisas, tacos de nada (potatoes), ponches, aguas frescas & many many more.
Beautiful recipe! Just be careful with the marinade being used as a dressing. It would be contaminated if the raw chicken was in same dish first! Solution: spoon the marinade over the chicken on a separate plate. Happy Eating :)
