  • Shabbat Dips and Salads Part 2:
    Eggplant Salad/ Beet Carpaccio/ Corn and Hearts of Palm Salad/ Carrot Salad/ Zucchini Stacks/ Sonya's Prep Shabbat Salads.
    Welcome to my new series here on this channel of Shabbat Dips and Salads! Of course these can be done anytime of the week. For those of us who constantly are stumped on what to make for Shabbat, I hope this series provides you with some inspiration.
    Recipes:
    Roasted Eggplant/pepper/onion Salad
    2 small colored peppers. 1 purple Onion. 1 medium Eggplant
    All cubed, on cookie tray lined with parchment paper
    Add ¼ c oil, s/p mix well
    450 degree 25-35 until nice and golden
    Add ¼ c vinegar, cilantro/dill/scallion, 3 crushed garlic, s/p. mix and done
    Zucchini stacks
    Shred 2 med zucchini in food processor
    Add 2-3 eggs and 2-3 TBS flour to get good consistency. 1 tsp salt and pepper
    Place batter on parchment lined cookie sheet and flatten
    400 deg 35 mins
    For sauce - ½ c mayo, 3 crushed garlic, s/p, 2 heaping TBP dill. (makes a lot of sauce, will have left over, may use ½ the recipe)
    Mix and placed on top of zucchini when cooked
    Cut in squares/rectangles to create a 2 layer stack
    May top with chopped dill and a sliced cherry tomato
    Carrot red onion salad
    1 red onion, 4-5carrots shredded long
    Add dill, 4 crushed garlic, 2 tsp sugar, dash coriander and cumin, ¼ tsp black pepper, 1 tsp salt, ¼ c oil, ¼ c white vinegar, ½ lemon squeezes
    Massage with gloved hand to marinate/soften carrots

    I’m 25 years old and have been married for 4 years and my biggest insecurity was my cooking. With small children and a full time job I always wondered how can I possibly do it all?     Oh wow! I made the zucchini stacks and they were amazing! I didn't have any mayo so I improvized with cream cheese thinned out with a little sour cream. They were delicious and VERY easy to make. i can't wait to try more of your recipes. I never knew what to do with vegtables before and now I have all your great ideas to try.

    Thanks for these recipes. We have vegetarians in the family and the roasted eggplant salad is a brilliant idea, all these salad recipes are amazing. I just did the roasting for the eggplant salad.
    I can now add tomato sauce and have ratatouille !

    Wow, I just discovered Super Woman! Now I'm obsessed. I have already watched about 50 shows but I have to watch them over again because I need to find the corn and hearts of palm salad to make for Shabbat tonight. (By the way, I'm crazy about those kids). They're the bonus.

    Sonya, I'm so excited about these salad recipes. I eat a plant based no oil diet for health reasons and I'm thrilled that you share the recipes so that I can find substitutions. They all look so amazing. It is nice to get fresh ideas and combinations that haven't occured to me before.
    I also reallty love that you prep everything from whole foods, I often take short cuts and purchase frozen chopped onions, pre-minced garlic, canned beans, etc. (although I do make a plant based mayo that is really really good) I wonder if you ever take shortcuts like that as well? I'll bet it doesn't taste as good as making everthing from scratch!

    Your salads are familiar yet different. My beet salad I use red onion, but the scallions look delish. For the carrot salad I use raisins to add sweetness. You seem to have a Moroccan flair to your spice selections, are you originally from that region? Israel also uses a wide variety of similar spices. I’m really enjoying your recipes, God bless

      @@SonyasPrep I ended up only trying the zucchini stacks. I was out of parchment paper so I used aluminum foil and it stuck on the edges. I was able to salvage it though. I added some zatar and paprika to the zucchini. For the sauce I used mostly cilantro and just a little dill because my husband doesn't care for dill. DELICIOUS!!! A new favorite recipe. So good! Thank you for posting.

    Sonya, which vinegar do you use? I learned that the plain one is somewhat toxic so I stopped using it, but I love vinegar and the lemon juice isn't doing the job, maybe you can advise a better version of vinegar? Thank you :)

      You can use any type of vinegar that you prefer. Red wine vinegar, apple cider vinegar, champagne vinegar...

    Sadly, I'm one of those people where cilantro tastes like you got sprayed in the mouth with perfume or air freshener...I suppose parsley would be a good substitute for these recipes, but I wish so badly that cilantro tasted delicious to me because I bet the flavor of these dishes is incredible!

    Don’t use a mandolin slicer without the hand guard!!! I sliced off a chunk of thumb doing that.
