Did a coopers stout + brew enhancer 2 + 500 g of dextrose to bump up %( can use 500g of DME instead) - 7 days in primary - 15 days in secondary - bulk primed with 165 g dextrose (might try more prime sugar next time) - 60 days in bottles and it turned out pretty good. At 30 days in bottle wasn't that great with too much of a black liquorice over tone but after 60 the flavours were evenly blended. Next I am going to do a coopers dark ale. Thanks for the vid

Thx for all the great vids Craig. After watching your vids last 4 months I finally made my first brew and decided too make the Copper's Dark Ale as i just love your tasteing vid on that beer ( the keg vid ), but as a first timer i did a small mistake that im little concern will ruin my brew.. I sanitazed all my stuff then use the coopers dark ale - 620 gr dextrose - 500 gr Muttons DME Amber - 20 liters of water and got the temp at 75°F - OG was 1.042 - coopers yeast in and all was ready but i put on the airlock and thought i moved it too a better place and lift it so the air in the bucket drag abit water from the airlock :/ so i removed the airlock and moved it and put it back on.. so its sitting in a steady 75°F temp room and im biteing my nails here :) and hopeing for the best... again great vids and thx for all the brew info.
Craig I brewd this Dark Ale a few weeks ago. I've kept the beer in the bottle for three weeks now. I did pour one a few days ago and it has a nice amber color too it. And it tastes delicious. Cheers
I made Coopers Dark Ale last year it is fantastic stuff I also made the Stout by Coopers and there is a slight taste difference between them, from memory the stout is more bitter keep up the great Videos Craig

Someone was telling me that yeast nutrient has uric acid in it in the form of horse piss and that the flavor thereof tends to come out if you age the beer over time. I've never had anything i've brewed last long enough to tell :)
@CraigTube, 1 Liter is exactly 33.81402 ounces but I usually round that to 33oz for some head space in the bottle. Excellent vid by the way. I've just now ordered one of these Dark Ale kits, having seen the taste test vid. Cheers

I made one of them Dark Ale brew's using 1.8Kg of dark liquid extract and a Nottingham Ale Yeast. Made around 19.5 litres. Think it ended up around just over 6% and very very moreish :-)
Craig, I'm a bit confused on the addition of tap water. Our city water is treated (lightly) and comes from an spring.... Is it okay for me to add hot water straight from my water heater? You think? I've been really hesitant of this.
One question, Craig. You pitched the yeast and then you stirred it in. I thought most instructions say to sprinkle on top and let it go. Why the stirring?
Try using molasses Graig , a nice dark molasses is better than that clear glucose ,we kiwis feed it to our cows in winter and , goo the Aussies make a dam good Rum with it. I have been putting in my stouts for years, good stuff.
Hey Craig, can't seem to find high malt glucose anywhere around where i live, but can get liquid glucose and liquid malt extract. If i do half glucose and half liquid malt extract do you think that would be similar to high malt glucose? My glucose looks the same as your high malt glucose

Corn syrup (KARO) have a balance of dextrose, fructose, malt and glucose to keep chemically stable, although this sweetener does have a limited shelf life compared to others. The most controversial form of corn syrup - high fructose corn syrup (HFCS) - is rarely sold directly to consumers, although it can be found in a majority of processed foods sold in grocery stores.
Craig,please go to Walmart and look in the baking /utensil section they have rubber oven mitts that would probably be perfect for picking up the hot can of left over extract and boiling water,every-time you show us picking up that can I keep thinking you are going to lose it and I hate to see that happen. Take a look next time your out that way if you remember anyway. Take care buddy.

Follow-up on my kegging comments, couldn't post more there. Sanitize, break down keg posts every few batches, wash, sanitize, lube. Check for leakage with a water test. Fast drinkability, leave in primary a few more days, put on carbonation to 20-30psi, roll on floor, crank down psi. One in closet, put in 1/2 the priming sugar used for bottling, shake, add co2, release couple of times, then put it in and leave it, sitting in closet until I want it. More but no more room here.
I live in NB, where did you pickup your high malt glucose ? I just did this kit and kilo and it's ok. I like the browns, dark beer and would like to do this again with your recipe especially after seeing your reaction to the taste test ! Cheers

I live in the woods in Alaska and you can't buy beer here...you can freight it in, but it ends up costing around $60.00 a case (24 bottles). So I've decided to make my own and you made this coopers dark ale look so ******* good, I thought I would give it a try. I'll let you know how it turns out.

I am really interested in trying a high malt glucose addition to Cooper's Dark Ale but have not been able to locate a source. Is there a source in the US that offers this product that you could recommend?
careful with using the spoon and sampling saliva is the most common contaminate with beer. i just use an electric can opener so i don't have to worry about the lid falling in again. are you going to have any additives to this dark ale as I did in mine? If you are i have no problem re-sending my dark ale recipe to you.
Hate to break it to you but Lambics are not fruit-flavored beers, altho' some lambics do have fuit added as a sweetener. Lambics are ales, most commonly wheats, that are allowed to be exposed to wild yeasts instead of using carefully selected yeasts. Most commonly they are allowed to be infected with the Vinters nightmare: Brettomyeces lambicus, which causes a distinctly sour or even "vinegary" flavor. Traditionally they are then mixed with two or three different brews or fruits to sweeten...

I'm bottling a coopers dark ale this morning,6.1 % abv. looking forward to knocking it back after 2 weeks conditioning.
Its only one week old sofar and tastes great already.

So adding corn syrup would boost the alcohol without ruining the beer?
Is dextrose good altrnate if you dont have anything else. I bought kilo of brewing sugar and a dark ale malt extract.

Craig i suggest adding two yeaste packs when you go with that high of gravity, its a safety really to make sure you have enough yeaste cells.
You said Mililitres when you should have said Litres. When you said you were gonna reduce the water. Don't know if anyone picked up on that.

Maybe you should try brewing with real malts and hops. Instant brew is simply amateurish. Get yourself a real brew setup and brew real beer.
