I listen to the original track, and transcribe all the parts into a music notation software called musescore. I also do all the arranging in musescore, so then I can have my own sheet music of the arrangement to read off of when recording, as opposed to having to learn each part by ear. It also gives me a mock-up version of the arrangement to use as a sort of ‘backing track’ when recording with the live instruments, which helps a lot with recording as it gives me an idea of what the final track will sound like.
