  • Delicious sugar-free, gluten-free lemon cake perfect for snacking with Rice and Almond Flour.
    Ingredients
    1/2 liter capacity mold | for 6-8 small servings
    👉🏻2 eggs
    👉🏻70 g of Natural or unsweetened vegetable Yogurt
    👉🏻2 tbsp of stevia
    👉🏻30 ml | 3 tablespoons freshly squeezed lemon juice
    👉🏻60 g Rice flour
    👉🏻70 g of ground Almonds
    👉🏻1 tsp baking powder
    👉🏻2 tablespoons of mild flavor vegetable oil
    👉🏻A few drops of vanilla
    👉🏻Zest of the peel of a lemon
    🔥Oven 170°c for 35-40 min | Cool completely before of cut
    👉🏻Optional - Glaze: 1 tbsp cottage cheese + 30 g of honey + zest of lemon peel
