  • This video will give you the complete in’s and outs of your classic Victoria sponge. Once you master and understand this recipe your caking game will move up to the next level.
    I’ve put a whole load of detail into this vid, alongside all the tips & tricks i’ve learnt over the years to get that perfect sponge!!

    Victoria Sponge Masterclass
    Ingredients:
    For cake:
    -200g stork/margarine (room temp)
    -200g sugar
    -3 large eggs (room temp)
    -1 tsp vanilla extract
    -200g self raising flour
    -1tsp baking powder
    -50ml milk (room temp)
    For filling:
    -200ml double cream
    -2 tbsp icing sugar + extra for dusting
    -1 tsp vanilla extract
    -3/4 tbsp strawberry/raspberry jam
    Equipment:
    -2 x 8 inch sandwich tins
    -Baking paper & scissors
    -Electric hand mixer/stand mixer
    -2 mixing bowls
    -scale
    -large sieve

    if I have self raising flour at home, can I use cake flour and add baking powder as a replacement? if okay, what should be the ingredients required in g please?
