- Easey to follow recipe, one pound each, Andouille sausage, dark and white meat chicken, and jo umbo cooked shrimp. First put about a quarter cup of vegetable oil in your pan,and one tablespoon bacon fat, heat to sizzling and add your sausage,brown a little add your garlic one tablespoon chopped one tablespoon real chicken base,stir and add you chicken, add 3 bay leaves and 1 quart of low sodium chicken stock, add 1cup each diced green pepper ,celery,and white onion,this is known as the Holy Trinity in Cajun cooking.stirring.Add your gumbo base with 3/4 quart ,pour into pot slowly while constantly stirring,this should thicken gumbo upnow you add your shrimp and the rest of the chicken stock simmer 5 minutes and then at the end add a shake of real file powder.place a scoope of white rice in the center of a bowl and put you gumbo around it top with cooked okra if you hrimp#want.#gumbo#jumbo shrimps# andouille sausage#chicken #chicken stock#holy trinity in cooking##chopped garlic#chicken base# Aldi stores#okra #baconfat#white rice#bay leaves#easy #new# gumbo base# no roux##grilli and chillin with Mojo# cooking with Mikes everyday BBQ.

This is one of Dennis’s faves. Our youngest daughter Joni knew that. She sent him a huge shipment of sausages and Creole spices from Louisiana. I’m not familiar with a couple of them, but they are waiting in the freezer. To darken my roux, I bake the flour to the desired doneness. Perfect choice for this weather, Karl!
