Hello and welcome to my channel! My name is Karl and I am a Chef with over 50 years experience in the food/restaurant industry. I graduated Washburn Chef School in 1972. I spent 17 years at the University of Illinois Hospital as a Culinary Specialist. I was a Corporate Executive Research Chef for Hershey Chocolates NPC, Farm Land Foods and Little Lady Foods. I was Executive Chef at Chateau Louise and later opened my own Deli called Chef Karl's Amazing Graze. I am now retired, but my passion for food and educating still drives me.
My goal is to teach as many people as I can how to prepare wonderful and simple food creations while educating and having fun along the way!

Beef tenderloin steak and king crabmeat sandwich made on a Blackstone with Bernaise and asparagus !
How to break down a pismal whole beef tenderloin cut into the head, the tail, the strap and the main tenderloin., how to take crabmeat out of the shell, how to grill your food on a Blackstone grill. Why cut off the nutrients? Taste delicious crispy sautéed in small amount of olive oil and generous amount of salt. All the vitamins you threw away, omega 3 we all need! Only takes 5 minutes on medium heat to get crispy and delicious 😋
So besides the corn bread, what are you serving it with? Sides are always a challenge to the star of the show. A top class dish like this needs a strong supporting cast like maybe a nutty Bulgar wheat and chopped black olives to provide a contrast of texture and flavor.

Being honest, chicken Marsala is not my favorite because i dont really like mushrooms. Still, i like the idea that of preparing the chicken and then using it for other recipes, especially the xhicken Parmesan.
Yes,chicken parm, piccata remake the chicken without mushrooms use peppers or onions instead!

Karl, you made the sandwiches that were mouth watering. Interesting use of horseradish sauce on the other. I am baking rye on Friday. I made corned beef last Sunday with all the trimmings, so we will celebrate St. Pat’s day with the last of the roast and Gruyère cheese along with sweet and sour kraut with my thousand island dressing from my Mom on top, your horseradish sauce on the bottom.
