I just made my first loaves of regular white bread using your cookbook recipe! I'm 73 and my two grandsons (24 and 27) live with me. I wanted spaghetti and meatballs for dinner and saw there was no bread in the house. The boys had taken their lunches to work today and used the last of it. What's a girl to do? After a nervous start; is the water too hot or too cold? Is the yeast active? Is my altitude of 6,000 feet going to be a problem? I pushed ahead and followed the directions and my knowledge from watching you make so many loaves over the years. Voila! I have homemade bread sitting on a cooling rack! I'm so happy! And grateful (greatful) to you, Chelsea, for sharing your life with us.

In the Netherlands we eat 'oliebollen' on new years eve. They look like the deep fried balls you made, bigger though and with a very simple yeast or sourdough batter (flour, water, yeast or sourdough starter, salt., sometimes with raisins or pieces of apples which are the best!)
they are deep fried after a couple of hours. the same what you did, you eat them freshly baked and sprinkled with powder sugar too.
🇦🇺It’s always good for kids to learn how to cook, bake etc for when mum’s not well. Great homeschool lessons. You’ve done your job well when the house continues to run without your input. When everyone knows what to do and helps out. From milking cows to making butter and cheese to baking sourdough bread and making meals.

A homesteader in New Zealand makes sour dough crackers. She makes a solid sheet of the crackers and scores them. After they are cooked, they are easy to separate

We LOVE sourdough waffles. We’ve done both AP and whole grain flour and both are amazing. My recipe ferments the starter, flour, buttermilk overnight, then add the sugar/honey, butter and eggs - Sooo amazing! I make a double batch and freeze the extras. They crisp up nicely in the toaster from frozen. Add a little homemade fruit syrup or monkey butter and delicious!
NYC Italian grandma here, zep-o-leee. I happy your tasted good, but I can't imagine the taste and texture being the same if made with ricotta. So many people use cottage cheese in stuffed pasta dishes too instead of ricotta. I love cottage cheese with fruit. I've made the discard crackers a few times. Thin batter, not refrigerated. Rolled them out in my baking sheet and sliced them with a pizza cutter. So easy to cut and bake.
That how we do it rolled out and use a pizza cutter.

I have a ton of discard, but I have failed at several recipes...so hoping your discard recipes inspire me to keep going! It's always a pleasure to see your videos.

We had that same wood stove at my Dad’s house and all I can say is bless you for having the patience to cook on it! I tried many many times and couldn’t finesse the heat enough to cook anything other than slow cooked stews. I really do miss the top warming cupboard, and you’re absolutely right about the coziness though. ❤

Your Zeppole's remind me of the Greek dish: Loukoumades. My favorite way to have them is to dunk them into a honey syrup (similar to what you make for Balkava) right after you fry them, then put them onto a plate and sprinkle walnuts!!!! SO GOOD
I keep my starter all year round. Like you, I'm a seasonal sourdough baker. I keep mine in the fridge and feed every so often! It just keeps getting better!
Great recipes & yummy looking results! I’ve been inspired by other RUclips channels using sourdough discard. I had just made sourdough cheddar crackers today but the recipe has no other liquid other than the sourdough. I found it hard to roll so I scooped it out & flattened with the palm of my hand. I had also used freshly milled Spelt & Kamut grain. They are a hearty cracker. Thanks for sharing 🤗🇨🇦

I thought that lemon juice (or vinegar) in milk was a substitute for buttermilk. I didn't know you could use it for a substitute for ricotta, too! So exciting to learn that!!!

I’m determined to make sourdough this year I know it’s better for you I buy it but really want to make my own and all the delicious things you can make with the discard
Love these ideas, I use the sourdough discard in corndog batter, which is basically a Korean corndog. My family and kids love it. Once you make Korean corndogs with the cheese filling and potatoes, it's hard to go back to the American style though.
The bread pudding love so good good. I love bread pudding but no one else likes it so I never get to make it.
I think it's high time you make some for yourself. I see no reason why you can't treat yourself to a smaller version that would give you 3-4 servings to enjoy. ❤
I use sourdough discard making graham crackers. They taste amazing dipped in coffee.
i bet if you spread cream cheese out on a saucer or small plate and then spread a little red pepper jelly over that...those crackers would a perfect combination for a snack idea. mmm

Chelsea, the problem isn’t the taste of olive oil when frying. The problem is in high temps, the olive oil breaks down into bad compounds. You might consider switching to avocado oil for deep frying.

Zeppoles are a NYC staple pronounced zep (short e) -long o -Lee we eat every Christmas and Easter =also sold in most pizzarias Just say it with a Brooklyn accent lol

I prefer bread and butter pudding, English style. Yum.
Ricotta Cheese: What you made was sour milk. Curds plus liquid. Ricotta Cheese is JUST the curds. So, your result will be the same as adding ricotta cheese AND milk. Not the same thing at all. BUT. Ricotta Cheese: Heat your milk to 194 degrees F, add the lemon juice, let sit, strain--the curds are the ricotta. There are LOTS of recipes with specific amounts and suggested times online, but basically if you had strained your sour milk you would have ended up with ricotta. Thanks for the fun!

Soured milk would have a completely different consistency than ricotta cheese.
For sure but it worked out great.
Thay are also called Jersey girls.
Don't bother using a cookie cutter. Roll dough to desired thickness and then just use a pizza cutter. Make square crackers 😊
