- Moutabal 🍆
Episode 4 in my 'Simple Ways' series, the aubergine (eggplant). Whether you love it or hate, this middle eastern dip is an absolute beauty and pairs well with so many different dishes. Full recipe below!
Ingredients:
2 aubergine (eggplant)
3 tbsp tahini (also show you how to make it in the video)
2 small garlic cloves (minced)
2 tbsp yoghurt
Juice of 1/2 lemon
1 tsp cumin (add more or less to preference)
2 tbsp olive oil (missed this clip in the video, but make sure to add it)
Salt & pepper to taste
Method:
1. Roast the aubergines over an open flame for 10 minutes until charred on the outside and is completely cooked throughout (should be soft). If not, continue to cook over the open flame. If you don't have an open flame, you can roast these in the oven instead.
2. Wrap the charred aubergine in foil and leave to cool (essential). Once cooled, remove the skins and crush in a pestle and mortar (or use a knife to very finely chop like it did).
3. Mix the aubergine with the rest of the ingredients.
4. Tip into a bowl and top with some chopped parsley, pomegranate seeds and a drizzle of olive oil. Enjoy!

Bro you should definitely do a qna video.we wanna know more about our chef😁😁
Was thinking about this the other day actually! I might start doing some voiceovers in some short videos (not the fast paced ASMR ones, but slower ones of me cooking simple dishes) - here I can answer any questions, talk about different topics and overall just show you guys a bit more of me (whilst cooking up delicious things). How does that sound? 😄🤙🏼

Sam is my weekly dose of satisfaction.
Not only did this man teach us how to make a moutabal, he also taught us how to make a simple tahini midway too!
Thanks Sam!
I also feel like this’d be a great dip with something like Cassava chips or nachos, or maybe even just a regular naan hot out of the oven/pan.
Tastes best with pita
Palestinian here: It is so satisfying to see a traditional dish that we grew up eating be made so beautifully and accurately. Also, the fact that you call it Moutabbal and not Baba Ghanouj is even more satisfying! Because it's the name we actually use!
Thank you so much!!
This is the first time I've seen a non middle eastern person on RUclips make moutabal the right way and actually call it by it's right name, you have no idea how amazing this is for me, thank you so much!! Also adding pomegranate is something I'll have to try seems like a great idea!!
Adding pomegranate is indeed a great idea since it has some acidity,
You can also use pomegranate molasses instead
Thanks for sharing this middle eastern dish! You have indeed used the exact ingredients and of course topped it with some fresh pomegranate seeds 😍 we need more of these simple yet delicious and authentic recipes!!
Been making this all my life, but I learned something today:
I always make this exact recipe and called it Baba Ghanoush but it is in fact Moutabal. There is a subtle difference between the two in that moutabal is a dip that is really mashed whereas Baba ghanoush is chopped pieces, often with tomatoes and walnuts/pomegranate molasses (now I will try that asap haha).
Anyways, thanks for the learning experience !
Yessss 100 percent i do prefer baba ghanoush tho
Baba ganoush has tomatoes
Yeah but Baba Ghanoush will always be better imo
We Bengali people make “begun vorta" which means mashed eggplant.
1.Coat the eggplant with mustard oil and roast it.Peel the skin.
2. Then add raw or sauted onion, fried dried red chili 🌶️, salt and mustard oil. Mix them and garnish with chopped coriander ☘️
Enjoy this with rice 🍚😋
🥲raw onions doesn't taste good
@@Covid--ch3ir It's begun in bangla.
@@Covid--ch3ir Begun is BANGLA. And I'm right. I born in Bangladesh,I live here and I will live here ❤️
@@REX-bx8if Yeah. I also don't like it. But my parents like it,so my mom makes it sometimes 😅

In East, we use white sesame to make tahini, this dish is called Muttabal in Jordan, Syria and lebanon, and Baba-ghanouj in Egypt ☺️👍

Poke tuna looks very tasty!
One important thing about making sushi rice is to cool rice to a room temperature with a fan after pouring the seasoned vinegar. Cooling with a fan gives a shine to the rice and prevents the rice to be soggy from the vinegar moisture.
👏👏👏😍 love this one of my friends does it best. They never gave me the real recipe except for charring the Aubs, now I got it. 😈😁

Try squab stuffed with short grain rice
Make the rice quarter cooked or half cooked (if you want it more softened)
