    材料:
    猪扒肉 大约200克
    腌制猪扒肉:
    姜汁 1 汤匙
    苏打粉 1/5 茶匙
    盐 1/4 茶匙
    胡椒粉 适量
    五香粉 1/4 茶匙
    蚝油 1/2 茶匙
    绍兴酒 1 茶匙
    蛋液 半粒
    玉米粉 1 汤匙
    酱汁:
    HP 酱 1 汤匙
    Lp汁 半汤匙
    番茄酱 1 汤匙
    酸梅酱 1 汤匙
    糖 1 汤匙 半
    清水 2 汤匙

    • 排骨王 Pork Ribs King | 在...
    Ingredients (Diana Aw)
    1. Ginger a small piece smashed and cut smaller. Put in a bowl with 1tbsp water and rub
    2. Pork chop x2 pieces (tenderize the meat with back of knife or meat hammer, then cut smaller pieces). Marinate with 1/5tsp of bicarbonate of soda, 1/4tsp salt, 1/4tsp five spice powder, little pepper, ginger water, 1/2tsp oyster sauce, 1tsp shao xing wine and mix well. Then add 1/2beaten egg and mix well. Lastly add 1tbsp corn starch and mix again. Set aside for 30min
    3. Fragrant oil (little)
    4. Green lettuce (one big piece)
    5. White sesame (little)
    Sauce (mix together)
    1. HP sauce 1tbsp
    2. Tomato sauce 1tbsp
    3. LP 1/2tbsp
    4. Plum sauce 1tbsp
    5. Sugar 1tbsp
    6. Water 2tbsp
    Method
    1. Heat pan with more oil to 150deg
    2. Turn to medium heat and add in pork chop and fry till cooked. Drain and reheat the oil to 180deg. Re-fry the pork chop till golden brown. Set aside
    3. Drain away the oil and add in the sauce under medium heat
    4. Once the sauce started to boil, add in the pork chop and mix well
    5. Once the sauce has thicken, add little fragrant oil and mix well
    6. Dish up on a plate with green lettuce
    7. Sprinkle some white sesame
    8. Serve and enjoy! 💕

    很棒的食谱,用鸡肉来煮一样好吃。
    不过,很不明白为什么这道菜明明是用猪扒肉煮,却叫“排骨”王。
    记得很多年前,当我还在念书时,一位来自中国的朋友就点了这道菜,当他看到这道菜送到时直接傻眼,还跟服务生争执,想起就觉得好笑。

      用小苏打加生粉腌制肉类半小时
      碱性物质可以有效水解肉类中的蛋白成分,从而让肉的纤维更软,口感也会变得更嫩。 但如果用量太多或者腌浸时间过长,会导致肉彻底失去原有的质感。

      Hi Anna, LP (Lea & Perrins) is actually Worcestershire sauce. HP sauce is brown sauce, mainly contains tomatoes and taramind extract. You may google to understand more. You may try to find both sauces in supermarkets. Hope it helps. 😊

      @@MrHongKitchen I think HP sauce can be replaced by BBQ sauce. The other sauce is Worcestershire sauce. They both are available in USA.

      猪扒肉是猪里脊肉,通常是位于近肋骨的猪柳位置。 是块状的猪肉
