I'm convinced the Fast and Furious franchise is actually filmed in an alternate dimension where there are different laws of physics, hence why to the producers of the movies, these scenes are realistic and make so much sense. Because no one in their right mind, with our understanding of physics and gravity, would dare otherwise to commit such an applauding understanding of physics and gravity to film.

I think gravity force is still there because they are falling. Its just there's not gonna be a friction force to keep the car going forward due to a lack of normal force upward.
