  • Hi there, it's Trisha from Tending to Home. Today we are talking canning. Specifically pressure canning green beans, for long term food storage. This instructional video gives you all the fundamentals* that you'll need to get started.
    *Disclaimer...PLEASE NOTE: I am not an expert and you should always check with your state or county extension about the rules and practices of processing food in a pressure canner. Your rate of pressure and time spent processing could differ from mine. Processing food incorrectly could lead to botulism poisoning. Better safe than sorry.
    All that aside, once you get your local information, the same basic rules apply. The key is to work with fresh, clean produce in a very clean and healthy environment. It is also wise to store your canned food in a cool, dry and dark environment for the best longevity of the food. I recommend an unfinished basement if possible. You'll also want to try to consume your food within about a year (although I've known food to last much longer than that). Again, when in doubt...check with your local extension.
