Cooking in le Creuset pans is different than ordinary pans. Usually you need to add more oil FIRST before anything else, and get it to temperature with oil only. Then add the various ingredients. Also - that black is easily removed by pouring water in the pot and heating it on the stove for a while. Some people bring it to a boil. Then the debris cleans up great. My favorite spaghetti sauce pan is an 11" LeCreuset. Brown the meat, caramelize the onions, then simmer for hours and hours.
You probably had the heat up way too high when you cooked the onions. That is the secret of cooking with Le Creuset cast iron pots. You don't need to cook at high heat ranges it is for slow cooking. Nice video!
Thanks so much for replying. I have a small 2 qt Le Creuset, and I just got a Lodge 6 qt. in red with the steel knob from Casa dot com, used a coupon code for it, and also got free shipping. It was like $40 shipped. It's been working out good, too. I really like it. I'm going to make a big pot of sauce and some meatballs today. I'd love to try this Palao. It looks so delicious.

All these years of cooking and only time I guess the strength comes in handy is when lifting a very heavy pot to drain water. And I did that plenty for my mother as a teen ager. Now I own some le creuset (the original real deal but expensive ) and the one you saw in the video that was from World Market/Cost Plus. And while cooking you cant tell the difference they are exactly the same except for 1/4th the price for the one in the video (World Market one). To clean I soak it in warm water with dish washing soap in it for over night and everything comes right off.
No! This is not Le Creuset ... This is from World Market. The reason why the onions look burnt in the begging stage of this cooking session is because there were just a few drops of olive oil used to sauté onions. As soon as other ingredients were added in later stages of cooking it all comes together and gives a very rich flavor for the dish. I also own and love Le Creuset and it does exactly the same thing with little or no oil. (Operator Error!) But I like to cook with no or very little oil.
i don't think that was a Le Creuset. that is probably why it burned on the bottom. look at the lid and the knob. i don't see any le creuset branding. and my le creuset have never done that.
Dude this pot was purchased to be used, burnet, over heated, put in oven at 600 degrees for hours. It was not bought to make it look pretty. Interestingly it looks the same today and works the same as on first day after 8 years of use

i don't think that was a Le Creuset. that is probably why it burned on the bottom. look at the lid and the knob. i don't see any le creuset branding. and my le creuset have never done that.
