    Ingredients:
    Bitter gourd 1 kg
    Salt to taste
    Water as required
    Ingredients for mutton:
    Mutton 1/2 kg
    Oil 1/2 cup
    Onion (sliced) 2 cups
    Tomatoes (chopped) 3
    Ginger garlic paste 1 tbsp
    Cumin powder 1 tsp
    Salt to taste
    Turmeric powder 1 tsp
    Coriander powder 1/2 tbsp
    Red chili powder 1 tbsp
    Garam masala powder 1/4 tsp
    Green coriander for garnish
    Green chilies 3-4
    Direction:
    Peel off bitter gourd
    deseed them and cut them into small pieces
    In a bowl add salt
    bitter gourd and let them sit for 20 to 25 minutes.
    Then add water and wash bitter gourd pieces in it.
    Drain the water
    take cheesecloth and squeeze all the extra water from bitter gourd.
    In a pan heat oil and fry bitter gourd until light golden
    brown and set aside.
    In another pot of water
    add mutton and cook until fully cooked
    Take it off
    In a pan heat oil
    add onion and cook until translucent
    Add ginger garlic paste, tomatoes
    salt
    cumin powder
    turmeric
    coriander powder
    red chili powder
    garam masala and
    cook for 4 to 5 minutes
    Now add boiled mutton
    mix it well and cook for 3 minutes
    Lastly add fried bitter gourd, green chilies and mix until well combined
    Garnish with fresh
    coriander and serve with roti
    Preparation time: 15-20 minutes
    Cooking time
    30-35 minutes
    Serving: 3-4
