Hi there Daniel, great video as always! I am currently in the market for a machine that would help me thin my knives and remove material behind the edge. I have tried to thin my knives with stones, but the amount of work that I need to do involves intense thinning. Would you recommend a disc grinder like the one that you use in the video? If so, what size discs are you using? EDIT:: apparently I am wrong and what you were using was a orbital sander and not a disc grinder
Hello. I am using a cheap disk (orbital) grinder. It was bought from a supermarket here in Romania but to be honest it was the only one that I found to be mounted vertical. I am using it when I have to repair a knife. It is much faster than waterstones.

Did you use water to cool the blade while cutting with the rotary tool and grinding with the sander?
Yes i had a spray bottle that i have used from time to time to cool the knife and I use my finger to feel if the material was getting hot. :)

@@DanielWorkshop When you are thinning behind the edge, would you be holding the knife the same way that you are holding it at 12:20 ?

If the finishing of the knife is not up to japanese standards maybe it's a chinese fake.
I have discussed with a friend and he had similar problems with anothe knife that he bought from official store here in Romania.
