Old family Caesar dressing recipe from my grandmother's grandmother. Maybe not "ultimate" but very good: 6 Cloves of garlic 2 Lemons, only fully juice 1 (use ALL of 1st lemon's juice, but only some juice of 2nd lemon if needed to adjust taste) 1 Salt Container, eyeball the salt, no specific amount (i never exceed 1 tsp but my aunts go nuts with it) 1 Can of Rolled Anchovies (must be rolled. reserve oil from can to add at end, if needed) 1/2 c EVOO 1/4 c Red Wine Vinegar "Splash" Worcestershire Mortar and pestle Peel, mince garlic & place in mortar. Cover garlic in a thin layer of salt & grind with pestle. More salt = easier grinding. Add rolled anchovies and a thin layer of salt to help grind. Grind until extremely smooth (this could take 10+ minutes). Add EVOO, red wine vinegar, juice from 1 lemon, and splash Worcestershire. Taste test. May add oil from anchovy can or lemon juice if need.
