Creamy Jalapeño Sauce Recipe YUM!!! || Black Gumbo

  • How to use up all these jalapeños?!?! I have too many! I harvested a bunch of peppers and made a restaurant style, authentic Mexican Jalapeño sauce today. The creamy texture and fresh garden flavors can't be beat. This is a simple and very fast recipe, and a great way to make use of your garden bounty. Recipe below is my own version of a simple classic:
    Creamy Jalapeño Sauce Restaurant Style
    3/4 pound green jalapeños, stemmed and cut into coins
    3/4 medium yellow onion, chopped coarsely
    3-5 cloves garlic to taste
    Juice of 2 small limes (~3 tbsp)
    cilantro (optional) to taste
    teaspoon salt (more or less to taste)
    teaspoon or more of MEXICAN oregano
    1/3 to 1/2 cup neutral oil (I use Avacado oil)
    1. Soften jalapeños and onions in pan with a little oil, don’t sauté, but sweat them down on medium heat, preserving as much green color as possible. Hint - cover and let the steam do the work. Cook until soft.
    2. All all ingredients except oil to blender or food processor. Blend on high, taste for seasoning and adjust as necessary. While blending, slowly add oil.
    3. When oil emulsifies, sauce is done!

    I had this sauce at Three Salas in Houston, we had to ask for it, because they thought it would be too hot for us. OMG we loved it, yes so hot. But addictive. I will definitely be sharing this video.

    Love this recipe! I’ve been nursing a foot injury and had to ignore my pepper plants. We’ve had rain but have not even looked at them in a month. Drove back there today and there are dozens of jalapeños and Serranos! Wow self maintenance plants! Thanks! Pet your puppy for me 🐕🙏

    Wow! Definitely rich and creamy, as creamy rich as the Avocado salsa made here and the imitation Avocado salsa (made with zucchini, no avocados) taco al pastor vendors make here. 😬gadzooks, just lookin' at ya eating chip after chip with the yummy Jalapeño Sauce made me respect ya because for sure you can take the heat peppers make!😂But then afterwards you tell us " the heat's beginning to "kick in"!🤣🤣👍

    Thanks for the recipe. I have jalapeños out my ears and I have no idea what to do with them. Hubby likes them fresh but when it’s full-on harvest season he can’t keep up. LOL

    Tried this and it is great. I have a high heat tolerance but eating it right after making it was difficult for me. It mellowed out after a night in the refrigerator, and now it is a great topping for chips and sandwiches. Thanks for the recipe!

    That’s funny my son ask me to make Siracusa sauce I ask him to find out what pepper goes into it first. So is that the only pepper in the Siracusa sauce you could use or do you use any other peppers? I’m growing different kinds. Just getting into the hot sauce part😁 love your videos learn alot.

    @ScottHead. HI Scott grest name. My brothers name also. I love you videos. Thanks for all the great info and advice over the years.. I do have a question if you have any ideas ,would be great. Im on Marylands Eastern Shore., we get these bur balls all over the front yard. . Our boys( Dogs) Buster & Jaxs get them stuck on their paws and we get them all over our shoes. . They are about the size of a pea and very bury. And idea where they come from and how to combat them. It look like a type of weed grass. But they come overnite. And i cut the grass short . Still get them . I burn some but it over acre. Well thank you so much for eveything. Todd

    Hey Scott, would this work with serano peppers or would it be to hot? Plus missing your videos but understand your gardening problems from this year. I live in Louisiana..

    I had a bumper crop of Jalapenos (regular, hot, chocolate varieties) as well as Serranos and habaneros. However, I did not know what to do with them all of them and put them in the freezer. Will this sauce work with frozen jalapeños?

    What kind of oil did you add to make creamy?

      He used avocado oil, there is no cream or dairy. Any neutral flavor oil would work. The taste of Olive oil would over power the other flavors. He used about two cups of oil but eye balled the amount until he got the consistency he wanted.

    So is this a dip, or a sauce to put on top of enchiladas or what? How do we use this? It seems like a kind of jalapeño mayonnaise or aïoli. And, honestly, if I had a glut of jalapeños I wonder if there's a pepper/onion base I could can up ?

      I get mine from online stores. Spices Inc and Spices Ect, try them, they are both nice people. It is surprising how much the type of oregano makes to a dish.

    You are cutting the only hot part of the pepper off? Oh, and the seeds aren’t the hot part, it’s the white placenta the seeds are connected to. The base of the placenta is like 90% of the heat.

    You’re losing a lot of pepper by cutting so far away from the stem!
    Grape seed oil is another good, neutral oil that is actually cheaper than avocado oil. In fact, if you have an Aldi’s in your area, they have the big bottle for a REALLY good price.
