Nice bar tape, I got the same :-) For me, it is easier to remove the handlebar, but let the stem on the fork. Just four screws with the torque wrench instead of aiming for a straight stem and trying to get the right amount of pressure for the cap. Ymmv, of course.

Probably your best video so far, disk brake bikes need spacer in the brake calipers but disk brake bike owners already know that.
