I tried different methods and measurements and find this method the easiest to use. About the 1:2 ratio, for example, if you have 70 gram egg whites you need 140 gram sugar of which 10 gram should be powdered sugar.
So your amounts should be:
70 gram (1/3 cup) egg whites, 130 gram (2/3 cup) sugar and 10 gram (1 tbsp) powdered sugar. If you have less or more egg whites just multiply it :).
Bake at 75/80c (170-175F) for 60-90 minutes (depending on size)

Anyone in the US make these? I’m curious to know what you cook them in. I don’t know of any oven that will go as low as 175.
What’s the lowest temperature your oven can go? If 200F/210F that’s also okay! just don’t let your meringues sit outside for too long and bake them immediately when your done. A slightly higher temperature also works fine, but just keep in mind there’s slightly more chance for them to crack.

Hi Amy, any idea why my meringue cookies are sticky when touched and not totally dry even though I baked them for more than 90 minutes?
Hi! Sometimes I just let mine dry overnight at room temperature if they still feel slightly sticky after baking :)
They shouldn’t feel sticky anymore the next day. It can happen that it feels sticky after baking due to the (remaining) heat. Hope this’ll help!

Oh no! :( they are very delicate and every oven is different. Mine cracked in the beginning as well no worries! Just keep in mind to work fast, pop your meringues immediately when your done. If you let them sit outside for too long will also make them more likely to crack when baking. Or try slightly different temperatures to see what works best for your oven?😕
Hi, just wondering what will happen if you use normal food colouring instead of gel
It could change the texture of your meringue and become more runny. If you don’t have gel food coloring just make sure you don’t use too much

I don’t think you have to buy gel just makes the color for vibrant

You actually do! If you don’t, it will give your meringue a slightly runnier consistency! This will makes them less stable and harder to make shapes with. Gel is the way to go! But if you use, liquid use a very small amount!
is powdered sugar means icing sugar? or normal sugar but grinded to powder?
No just icing sugar is fine!

Hmm haven’t tried it yet! It should float, however I wouldn’t recommend pouring hot milk over it or your meringues will immediately get soaked and not look cute😅 or just let it melt in a cup with hot milk and see how that turns out? Ill give it a go soon!

They do melt! It takes some time though and depending on how hot your drink is as well😉 it adds a tiny bit of sweetness to your drink

Hi! Yes they need to be baked at 70-80 degree celsius for about 60-90 minutes depending on size. Would recommend using a convection oven not fan, because they might crack easier😕

Yes no problem😉 just make sure to work fast or your meringue could become soft/runny if set aside for too long
