Yes, TriCal triticale can be grazed. It is one of the more popular of the uses of our products.
The best time to plant for Central Texas will be mid September, or as it starts to cool off at night and you catch a little moisture. You can plant all the way through December or January if you had to. Lots of flexibility with your planting timing with triticale.
