For the potato/tuna cakes, put some panko on them, that will help with the texture. I don't usually go for canned tuna except for the occasional tuna sandwich, but I did have a tuna sushi roll at Hong Kong Disney that was pretty good.
looking forward to this... loved the spam video. the fish cakes could do with a coat of panko bread crumbs for more crunch... maybe put them on with an additional egg brushed on cakes before the panko added? I am so enjoying the inspiration for cooking from your recipes, Janice! Oh, had another thought - with your vegan cheese you could try broiling it and see if it would melt well that way. Many thanks for the inspiration you bring to mind! Am watching a few more before going to the store this afternoon. I need to pick up some fish sauce and go ge chang ... no idea how to spell that, and if I can find it some kimchee. very happy to watch your videos!!
call the producer of the vegan cheese and ask what is the melting temp. of the cheese. that must be the "baking temp." of this dish. Loved the show. easy recipes, detailed visible instructions. GREAT WORK

Hi from Michigan, USA, just found your channel. Had planned my dinner already for later (boring frozen meal w/extra veggies), but now I'm going to head into the pantry & and grab a can of tuna & whatever else sounds good. Have been stuck at home for 3 months. Where I live has been a hot zone for the Covid virus. Have a favorite Sushi restaurant three minutes from where I live and haven't been able to go there in three months. Watching your video reminds me that I've wanted to learn to make Sushi at home so will make that my goal for the Summer! Thanks so much and I'll be checking out your other videos.
I tried your tuna potato fishcake ☺️ I added some grated carrot, which added a crunchy texture. It turned out really well. Thanks for the great idea 😊🙏🏼
It is hard to get melty vegan cheese. Worth exploring some of the vegan food-review sites where they can tell you these things. You can also make a nice crunchy mix of breadcrumbs, ground almond, herbs, seasoning, some vegan cheese *finely* grated, or you can get vagan 'parmesan', some nutritional yeast, a bit of oil. Sprinkle, bake! Not melty, but tasty.
Somali/Kenyan recipe (with cheat step for the samosa dough) *Tuna Samosas* Use tortillas cut in the middle into two (small tortilla) or 4 (large) to make little pockets using a thick flour paste as glue In a pan with oil cook some canned tuna, garlic, coriander onion and spices until dry-ish The assemble and fry up medium heat (careful they burn quick) Make a lil chutney dip and voila
After trying both canned tuna in oil and canned tuna in water, I have to say that oil is the superior choice. The reason canned tuna in water stinks more, is because of the metal. The cooked tuna on its own has a mild to moderate odor, but the odor of the metal is actually stronger, and actually gets amplified by getting mixed into the water. The water also enables the fish odor to get absorbed into the metal, so even after you empty the can and wash it with water alone, the combined odor of the fish and metal remains. With oil, the oil absorbs the flavor of whichever fish it is sitting with, but the oil actually does not absorb any of the metal odor. As such, the oil actually serves as a protective coating to prevent the metal odor from seeping into the fish. For people with health concerns and questions about fat content, you will be pleased to know that tuna actually has no fat of its own. None. As a result, the only source of fat in oil-packed tuna, is the oil. The cheapest tuna cans use soybean oil, and you have to pay more for tuna packed in olive oil. But, both soybean and olive oil are primarily unsaturated fats, and both are relatively good for your health. When consumed in moderation of course. To prevent any health risks, I recommend switching from frying/deep frying to sauteeing. For those who do not know, frying is cooking a food while it is fully suberged in an oil, and sauteeing is cooking a food with only a thin layer of oil covering the pan.
Hi Janice, I've watched several of your videos and your struggle with lactose intolerance. I'm lactose intolerant also. Fortunately it is only the primary dairy products, e.g., milk, ice cream, yogurt, etc. that affect me. Cheeses do not affect me. But I'm curious, have you tried a lactase enzyme supplement? It works well for me.
hey Boyd, i tried it once but it didn't really help :( i also noticed that my intolerance gets worse with age... when i was a kid i could eat cereal with milk!
Janice Fung: You may want to try aged cheese, which loses pretty much all of it's lactose during the aging process. I am highly lactose intolerant and cheese that has aged for more than 6-8 months works perfectly for me. Vintage Cheddar, aged Parmesan or aged Swiss Gruyère should also be available in Australia. Give it a try!
Hi I'm from Barcelona and I do have some recepe one of them is boild eggs stuffed with tuna mayo and the yoke of the egg and to decorate you will put a slice of red pepper baked though on top 😋😁👌 it's so yummy x
To get a crunchier coating on your fishcakes you could dip them into 1 flour 2 beaten egg 3 panko breadcrumbs before frying. Also Liddells make a number of lactose free dairy products available in Woolies. Their products are better than the vegan cheeses.
To make your tuna fish cakes crispy, use freshly grated potatoes instead of boiled mashed potatoes. Add 2 tbsp potato or corn flour. All the rest is the same.
great video! it's the first one of yours that's shown up on my feed and i'll definitely be watching more. i have a couple tuna tips: first, if you hate celery like me, use diced cucumber instead in the tuna salad. equally refreshing and crunchy :) second, my favorite super easy canned tuna recipe is chamchijeon, or korean tuna pancakes. mix a ratio of 1 can drained and flaked tuna, 1 egg, 1 clove minced garlic, and 1 tablespoon of flour. very easy to double or more if you need to feed a crowd. add whatever veg you like, i just do diced green onions but you could use regular onions, carrots, etc too. pan fry heaping spoonfuls with a little oil until golden brown and crispy on both sides. that's it! sriracha mayo is the perfect dipping sauce, and if you add rice and sigeumchi namul you have a perfect easy meal.
The tuna fish cakes you could try dipping them first in flour then beaten egg then breadcrumbs try that to make them more crispy .Some great idears for quick meals or snack . Nice vlog as always stay safe take care

With the vegan cheese put it in a small pot and add a lil soy milk in the pot with the cheese on low heat and melt to make a cheese sauce then add on the pasta bake
Hi Janice, I tried the fish cakes but they won’t stick together in the pan and ended up like pancakes. Perhaps I should have placed them in the fridge for half an hour so that they “settle”. I will add some bread crumbs next time. Nevertheless, they tasted good, thanks !
@@JaniceFung When making Tuna/Pasta Salad I tend to add Mayonnaise rather that a Salad Dressing. The Tuna Cakes I would probably Egg Wash and Bread Crumb a couple of times before frying. Hi Janice... another great video! 👍Here is one more idea for you... substitute the tuna for Spam for your six recipes.Should be another great video in the future making.... 😉
There is a cheese at coles in the deli or special cheeses section called mini chol. It is a soy cheese and it melts really well and tastes really good. It’s from Sweden and costs about $10 for a block that you will need to grate which takes no time at all. Cheers ✌️
I like to have tuna with boiled egg as sandwich spread, and replace mayo with Greek yoghurt and few drops of lemon juice. That makes me feel I’m eating healthier hahah~
I love the way you do the recipes: you show the ingredients, and then while preparing them, you're explaining the amounts, etc but not in real time (in other words, it's sped up a bit). I don't have the patience to watch when people do a cooking video all in real time, it just takes too long and I just don't have the attention span, lol. This way is quicker but also very clear. Great job!
I could probably follow one of your recipes (but actually”veganise it”) there is a brand that is being sold at Woolworths and Coles called: “Tuno” and it is a “vegan Tuna” version and it tastes great. With so many vegan options out there now, (there is no need to consume much in the way of animal products). There are even “vegan egg options” out there as well with a brand called: “Follow Your Heart”. Thank you for your wonderful videos though, take care they have been very inspirational. Hopefully one day you can do a vegan and gluten-free option, (I am gluten-free as well). Wow you have gotten vegan cheese! I am so proud of you now if you have the “vegan Tuno” that would make the dish absolutely brilliant! (I mean I am sure it is already brilliant but the difference is not vegan). No that vegan cheese does melt because I have used it when I was cooking my pasta but you just need to cook it for a bit longer in order to melt it. (However, I would definitely suggest that you probably, whatever it is that you are cooking you do it on low heat so that you would avoid burning whatever it is that you are preparing). That Bio cheese is certainly a good brand. Vegan cheese does take longer to melt than “normal cheese”. Anyway, wishing you all the best with your future videos and please, hopefully you can make a “vegan version”. (There are so many great vegan options at the supermarket now).
you can make tuna curry with gravy, you can also cook tuna with brinjal, put some indian masalas like red chilly powder, yellow powder, pepper, salt and lil tomato sauce and cook the tuna along with the brinjal...or and some vege masala... its good...for seasoning you can add the mustard seeds in the beginning to splutter and at the end either coriandor leaf, or curry leaf or the long green spring onions.... secondly you can cook tuna with tapioca once its soft and mix them up and put your selection of masalas.... you can make tuna cutlets similar to your patties....you can also use it as a filling in chappatis or dosas etc or even iddlis and fry them and the list goes endless for tuna receipes
Instead of mayonnaise, I use... Can tuna, Olive oil, roasted sesame oil, tamari, fish sauce, garlic & onion power, salt & pepper.... For sushi rice just add a bit of sugar and rice vinegar...
Very nice. HOWEVER, what size can of tuna are you using. It looks to me as if it is a small (individual size, about 3.5 ounces) size can. I would appreciate the info.
For the tuna pancake, try deep frying the potatoes instead of boiling them. Cut them into 1cm thick, fry them, then mash. No need for butter. Add a pinch of nutmeg and you'll end up with Indonesian "perkedel".
To make the outsides crunchier, remove the water from the tuna. I make these all the time and they are fantastic... and CRUNCHY! Check out this recipe for tuna patties: ruclips.net/video/gqf8pFcUoKw/видео.html
Re: fishcakes. Use a panko breadcrumb in one dish and beaten egg and a little water in another dish. Dip cakes in egg mixture, then in panko. Do this twice for 3x crispy cakes. Then fry. Enjoy!!
