Having mastered the art of preparing cow hooves and ox-heads, our guest Aliphius ‘Maparuma’ Sibanda guides us through a traditional process known as Ukufusa Amangqina (removing the cow hooves fur using fire). We also discuss the cultural narratives associated with the consumption of cow hooves and present a special type of herb known as Imbiza yabobaba that is added to the soup of the dish. The herb serves as an avenue to improving one’s health and vitality.

~ About Magriza Made Me Cook:
» Magriza is slang for uGogo (Grandmother in isiNdebele) and the name of the show is derived from Prince's inspiration for falling in love with cooking; his grandmother. The goal of MMMC is to document and serve Africa's diverse food culture, one dish at a time. We believe that Africa has got unique meals that ought to be talked about, and most importantly, cooked consistently. We believe in the values of Ubuntu, Respect, Creativity and Minimalism.

I know it is traditionally for men to eat but my grandfather and father have shared their share of inhloko so I could have a taste. I found it really nice. The way they make it, they don't cook it immediately after the cow has been slaughtered but instead leave it to rest so that it has a slightly off taste which is actually really nice.

MfokaMahlangu, imbiza yabobaba idliwa specifically lengqina langemuva (hind hooves) not any other. The significance of that being the fact that inkunzi nxa ikhwela izinkomokazi, it stands on those hind legs and humps. Iqolo layo is closer to the hind hooves.
