There are millions of people in India who work hard and are talented but don't have money, many crooks in India get rich by exploiting good people, thugs become rich, cunning become rich, terrorists get rich, politicians get rich, smugglers get rich...that's India
If it was prepared in the west, the guy who is doing hand churning would be charging more money than the chef in the restaurant who is creating texture just nitrogen charging.
Yep. Cuz the public in west is becoming more n more aware about the process of goods or food they buy and how it was prepared and type of skill involved.
True that! People in the west pay for the skills you possess and are willing to shell out more for an organic process and hands on experiences like these. Ironically, here we pay for the ambience and name.
The last line of Rakesh Ji says a lot. He don't want to continue in future as it is very long process and less profit business. He is concerned for his next generation. But I want to go to him for having Daulat Ki Chaat. Hat's off to him🌟🙏🏼🌟
This is one of the most amazing videos to come out of The Quint. A great story and the Stark contrast being portrayed is everything wrong with the world.
I will definitely go to Rakesh Kumar's redi and have the daulat ki chaat. That chef probably makes lakhs and did nothing. But Rakesh Kumar is putting so much effort and hard work.
1:05 Chiffon machine??? Did the Chef call a siphon gun a chiffon machine?? If you are going to use technology over technique atleast learn what that piece of tech is called
All the people hating the chef and feeling bad for Rakesh are the same people who will prefer to eat the chef version vs Rakesh’s cause its expensive and from a five star restaurant. The consumer is the reason Rakesh won’t continue this.
A perfect example showing two sides of the coin perfectly sums up India as a country. There is everything for everyone here. Would love to see our street food vendors and other labourers like the electrician, plumbers etc get the same recognition and value if not more than an executive working in an MNC. A plumber in London charges 2000 INR to 3000 INR per hour while in Indian some actually make similar money for the whole month which is so so unfair.
Uff that last line..... is line mein hum hi last honge.... really hit hard... I wish government, high end hotels and restaurants pay attention to what these artists make and mean.... they deserve respect attention and dignified living standards.....
Why don't this restaurant hire this poor hard working man.... That will be justice for both chef and customer.. Authentic taste for that much price. I really felt sad when he sad... "he will last in this line"
What a journalism , Hats off to you , This video surpassed many books or news I read , Continue this richness in your work and show this kind of videos often. Thank you.
Rakesh Kumar's last sentence broke my heart. This half a millennia old recipe and technique will die with him and others like him. We will be left with a modern twist of the dish made using modern techniques, machines and one day only the name will remain and our children will never get to taste the real thing.
Comparing street food and chefs culinary products are like comparing crude and refined, like milk and ghee both fabulous. Shifting forest to feild and back to forest.
2 chefs, one using modern equipment to destroy the dish's authenticity and magic. He maybe charging 10 times the cost On the other hand you have a man putting in all his time and effort and creating an absolutely miraculous dessert with all its authenticity preserved and charging merely pennies for it Choose wisely
He should use a motorised churner and introduce more flavours. It's not a poor and rich difference if you look at it. Rakesh only sees it as a business, for him it is a chore. The chef has passion so it becomes art.
In India, if you are rich you are automatically a villain. It matters little you may have spent years perfecting your skills, spent time getting better at stuff beyond work and were clever enough to balance work, passion and life. No, in India if you are yourself not rich, the ones who are rich must surely be villains. :/
Rakesh kumar doulat ki chat looks yummier than the nitrogen one 😂 And I don't want to waste his effort. The irony of today is one is happy by preparing the same thing while other one don't want to continue even. That's why luck is also needed with hard work in this world.
I agree that's the Irony ...Fools will call it Daulat ki chat sitting in a Restaurant ,the consistency is very different from what you achieve by Hands. A few with fine taste will understand it . The person making by Hand says he is the last in Line probably who is making this Art,The chef says he wants to continue this in restaurant as it makes good money. I am thinking Does Money make people Foolish.
Kal CChok me hi tha .ek banda ye chat bech rha tha .mujhe lga ki pta nhi ye kaisi chat he. Or aaj ispe video dekh rha hun. Next time us chat ko try krunga
Just to add a little bit of perspective, 5 mins vs 5 hours think where you want to spend. Where tech is considered effort vs actually effort for survival.
That chef efforts are worthless in front of man who is selling it on cart, it is already very expensive like 3-4 teaspoon cost around Rs50 on streets so imagine how costly it is gonna be in swanky restaurants.
Let's we all go to Rakesh ji for the chaat and not those fancy restaurants with only fancy and english speaking chefs creating hype about his 4 years of mere experience (in front of Rakesh ji's 18 years of experience that too with efforts), who himself is accepting "ki ye KARIGARI KA KAAM hai" Let's just visit Rakesh ji and ensure his coming generations a safe future in this business and convenice him to continue and pass this tedious work to not just his kids but train more artisans, please, let's do it.
He is not interested to continue with his next generation y? Daulat ki chaat banaane wale zaroor Daulat kamayani chahiye. By the way what is the cost of this chaat on streets n in restaurant
The last line of Rakesh is the most heavily loaded with meaning(s): "is line me nhi dalnge, is line ne hami last honge bs" says a lot.
I genuinely felt sad after that line.. woh bolte hai na dil me tis marna ..wala feeling si aayi
Sahi. Baar hai🕊
That's how it will end.....and his son will for 20 k for some and call it educated job......very sad
2 Chefs 2 perspectives to life. I wish the Govt recognises such artisans and helps them protect our heritage.
I will go for Rakesh Kumar's Daulat ki chaat. Coz he's taking good amount of efforts to make it.
171 people do care about him. No one cares about you.
You would know better
Sad to see Rakesh earning way less than his counterpart. Why not start a gofundme campaign for Rakesh ?
There are millions of people in India who work hard and are talented but don't have money, many crooks in India get rich by exploiting good people, thugs become rich, cunning become rich, terrorists get rich, politicians get rich, smugglers get rich...that's India
Srinivasan Rajappa are you dumb... do you know what is the purpose of gofundme...
There's no short cut to happiness ... I'll go with the traditional guy
True...
And also a patent would have been applied and awarded.
True that!
People in the west pay for the skills you possess and are willing to shell out more for an organic process and hands on experiences like these.
Ironically, here we pay for the ambience and name.
So true! I felt very sad when he said he wont pass on his skill to his children!

Irony of life...rich getting richer ...
Poor getting poorer
To the rich, everything will be given and from the poor everything will be taken
Reminds me of the song this happens only in India 😏
Copied
What's the irony in that?
Dept of agriculture why u say tis??
Thinking
I've tried both the versions and believe me the one which is churned by hand tasted far better than the machine one.
I feel sorry for the rakesh kumar. This is the last generation to serve that chaat... Kudos
I watched the whole video because i desprately wanted to see someone tasting both the versions....
Ya me too
This is one of the most amazing videos to come out of The Quint. A great story and the Stark contrast being portrayed is everything wrong with the world.
Traditional way is preferred
I will definitely go to Rakesh Kumar's redi and have the daulat ki chaat. That chef probably makes lakhs and did nothing. But Rakesh Kumar is putting so much effort and hard work.
Such a sad ending, it's almost heartbreaking.. I wish the guy on cart in delhi 6 learns how to modernize his craft
1:05 Chiffon machine??? Did the Chef call a siphon gun a chiffon machine?? If you are going to use technology over technique atleast learn what that piece of tech is called

which part of india you are staying where plumber or others makes 2-3K monthly.
See the attitude of chef and simplicity of simple man.
The way he said it i will be the last one doing it. Made me felt how technology is replacing hardwork
Brilliant. Kudos to director. Quint defeating Vice here.

The contrast .
Ooof goosebumps .
I just had daulat ki chaat in old Delhi today and all I can say is that my ₹50 would've been spent better elsewhere.
Why? Was it bad?
@@geek7227 it was just whipped cream with half a crushed peda on top..
# me too.
I couldn't feel anything.
Tanmay McGrath over hyped

Hard work -- Rs 20/plate
Smart work -- Rs 200/plate
Basic difference between a hardworking class and a rich technology class but hardworking class gets disappeared.
Why don't this restaurant hire this poor hard working man.... That will be justice for both chef and customer.. Authentic taste for that much price.
I really felt sad when he sad... "he will last in this line"
Next time I go to Delhi..I will pay 2k for his chat. We need to encourage these people. Skill should not be lost
I’ll eat from the humble road shop
You cannot go that easily to Indian accent anyway. It takes months to get a reservation.
You also would have shown how to reach Mr. Rakesh Kumar.
I just want thank for all those who make this video it inform us about both aspect of life
Original is Original...Hatsoff to the hard wrk and the effort in making ds dessert fr the common people.🙏

Love the juxtaposition of the two methods...kudos to the editor
I have tasted in Indian accent.. But good too you know about Baburam ji.. Definitely going to visit him..

The contrast did catch the eyes.
Very sad to see this man saying he won't pass on to his next generation
..whyyyy..u shoul proudly do this job..
Sad but true . Last generation doing this:-(
Comparing street food and chefs culinary products are like comparing crude and refined, like milk and ghee both fabulous. Shifting forest to feild and back to forest.
Amazing taste super rich taste if anyone visit delhi shourly try daulat ki chaat

Rakesh Kumar hatsoff...
Such a nice comparison. It just put things in perspective. Tradition technic vs technology.
Daulat is urdu word in Hindi it is Dhan .
I love makhaan malai...trust me it's a delicacy..

@@kunalbhagawati9136 Rightly said!
Is daulat ki chaat in delhi and malaiyo in Varanasi same?
Yes both are the same recipe with a minor variation
Thanks ♥

FIRST QUINT VIDEO I LIKED.
Bhai Dil ko lag Gaye Teri bat....
Is line main hum hi last Hain....
I had few times..it is superb!
Have tried both, the strret version of chandni chowk was miles ahead of Indian accent one.
U get it in Banaras where it's called Malaiyo and in Lucknow as Nimish or Makkhan malai.
Lucknow Kanpur main yeh 15Rs main 100gm milta h winters main
Nice video, brings out the opposite spectrums and thought process
Last line is line main bachon ko nahi dalnge hum he last hain!ankho main ansoo aagaye
Gareebon ka koi nahi
Chef just made it like wipped cream
Never thought i would ever see a vedio on this wonderfull dessert
Going to Rakesh ji for the chaat soon!
Nice comparison of both, I had daulat ki Chaat in old Delhi today but from a different vendor khemchand
Lucknow kanpur mein shayad malai makhan kehte...and we get it mostly in winters

Respect for the poor man from 🇵🇰
Street version ❤️
Desi Daulat ki chaat is best than the modified chaat

WAHHH FOOD OR INDIA
He is using nitrogen spray then what is the traditional meaning ... Five star is just name sake
I would eat the street wala💜💜💜
It looks better and must taste good too but where is the sweet??
In Lucknow we call it Nimish or Makkhan Malai
What a difference in both, It will stay forever and ever, and I will be the last one doing it. Two men, same role, uncommon and uncomforting ending.
And the price differences are so far in between 🤔
Innovative
I love दौलत की चाट.. Recently I had it at CP food fest 100rs बाबा rey शायद 14sall Baad khaai
This sweet belong to varanasi
Has nothing to do with mugals
