I am a lawyer, now retired almost 80 yrs. & was surprised to hear from you about sinanglaw being eaten with bijon & arroz caldo as claimed by the 1st eatery you tasted sinanglaw which we called then "kilawen" during our time. I am a vigaoeno by heart being born there but seldom go home now, except for short vacations with my family or when bringing & touring closed friends & colleagues or supervising the necessarily repairs & maintenance in our ancestral home which we entrusted to our caretaker. The only & original family who offered vigan sinanglaw almost or more than a century ago were the "Azada" family who reside just as the back of our ancestral house, living in a small nipa hut (now most of their descendants have concrete & beautiful houses) who cook only 1 tapayan full of sinanglaw everyday contained in a big earthen jar & when the family would learn thst we were in vigan vacationing (our family migrated to Manila in the 1960's when my father who is also a lawyer got a job at the Bureau of Customs), they would bring us the following morning, one big bowl of sinanglaw to feast on. We ate sinanglaw with NO RICE or anything because sinanglaw was merely considered as a late morning snack after breakfast. Vigan folks then who wanted to eat sinanglaw have to go to the "Azada" house to buy it with their own container & bring home to eat in their own houses. Most of those now offering sinanglaw in vigan were merely their neighbors who assisted the family in preparing & cooking, as their business grew where they could not anymore meet the demand. This after vigan became more popular when it was declared a UNESCO site, long bfore Vigan was chosen one of the 7 wonder cities of the world. Now when we want to eat sinanglaw, we just ask one of the Azada family to send us sinanglaw thru the many buses plying manila-vigan-manila we term as "waybill" bcuz my children when they go home for vacation in the Phils. missed sinanglaw. A few years back, a crew of one of the biggest Japanese TV NEtwork, Nippon TV Network went to Vigan to interview the "Azada" family after they learned how popular sinanglaw was in the country which originated in Vigan. I saw your vlog just the other day while I was watching activities of interest re: vigan esp. during the holyweek & had to correct the impression of eating sinanglaw with bihon & arroz caldo. Presently am still vacationing in the US & hope to be back home after a month. Enjoyed your vlog. More power to you!!!!!!
This is bar none my favorite food when I was living in Vigan. The good thing about it besides sobrang sarap, sobrang effective din magtanggal ng hangover. Kahit gaano pa katindi yang hangover mo, talo yan sa isang higop palang ng sabaw ng sinanglao.
When I was assigned in Vigan, I always went to to the Market, and buy an ilocano dish which consist of thinly sliced beef bite size and with some tripes, called Lib-libro, with bile juice and chili, the beef by the way is raw, do not know what it is called never asked them but they r delicious.
Actually yang Sinanglao masasabi ko syang "deconstructed" papaitan kasi nga nakahiwalay yung mismong papait nya.. Grabe namiss ko na talaga ang Ilocos lalo ang food! (though Norte nga lang yung relatives namin)
The original sinabglaw makers of vigan who occupied the one on the side of the post office were ejected by the post office head & rented it out daw to a relative. Now the original sinanglaw cook rented a gsrage somewhere we call "kabasaan". Calesa drivers should know this place
