DOLMA RECIPE | ARMENIAN STUFFED VEGETABLES

  • Dolma is a Middle Eastern dish made in many different countries. This is the Armenian version of it. It’s typically a dish made on special occasions because of the amount of work that goes into making it. Enjoy!

    Ingredients:
    Vegetables (to be stuffed)
    - Mexican squash (about 3)
    - Zucchini (about 2)
    - Bell pepper (any color about 2)
    - Anaheim pepper (about 2)
    - Jalapeno pepper (about 2)
    - Tomato (about 2)
    - Salt & pepper
    Stuffing
    - 1/2 lb ground beef (at least 15% fat)
    - 1/2 cup long grain rice
    - 1/2 cup chopped red/green bell peppers
    - 1 cup chopped roma tomato (~1 tomato)
    - 1 cup tomato sauce (8oz. can)
    - 1 tbsp. chopped fresh mint
    - 6 cloves minced garlic
    - 1 tsp. salt
    - 1 tsp. ground black pepper
    - 1 tsp. Aleppo pepper
    - 2 tbsp. hot pepper paste
    Finish
    - 1/4 cup lemon juice (or to taste)

      It is authentic Armenian dish the recipe was passed to Turkish people not by choice during the years they dominated Armenia. Read about the ottoman, empire. This is one of the many Armenian dishes the Turkish people claim it to be theirs. They learned the recipes from the Armenian people and then they passed it to the other regions they ruled for many years, and they claimed it to be a Turkish cuisine. I wonder were did they learned how to cook like this when they came from Mongolia ? If all the Armenian dishes is Turkish dishes, I like to ask the Turkish people please tell me what are the authentic Armenian dishes? What the western Armenians eat before the Genocide? Remember, Armenia had a very vast region and many provinces, and each province had their own special dishes very unique and different from the other provinces. The eastern Armenians today were isolated from the Western Armenia, they did not go through the Genocide nor did they were suppressed by the ottoman empire. They did not cook any of the Western Armenian dishes. That’s why they have totally different cuisine from western Armenians. It was later when the western Armenians migrated to Eastern Armenian they started opening restaurants and started to teach Eastern Armenians how to cook Western Armenian dishes. The Turkish people have their own unique and delicious dishes I don’t understand why they refuse to promote their ancestral cuisine why they try hard to deny their origin and strive to become westerners. It’s your past that make you who you are today. If you deny your past your tradition then you no longer who you are but totally fake person living in different identity. I think that is very sad.

      ​@@elizabethc3629If this dish were an Armenian dish, it would not be called "dolma". "dolma" means stuffing something into Turkish.

    Looks like the dolma we grew up eating, my dad is from algeria and it's very similar ^^ but we just dont make it spicy. :)

    I thought it was supposed to be in grape leaves. I haven’t seen it put into vegetables before. Interesting.

      Every country makes it differently. Some people use only grape leaves and no veggies, some use only veggies, some do both. In Iraqi cuisine we use grape leaves, the layers of onions, tomato, zucchini, eggplant, peppers, sometimes cabbage, etc.

    Dolma meaning "filling" in Turkish, is the name for a number of dishes which are common in eastern Mediterranean and Caucasian cuisines. Usually, a kind of vegetable is filled with rice and chopped or ground meat. Instead of a vegetable, vine leaves are sometimes used.
    In 2017, dolma making in Azerbaijan was included in the UNESCO Intangible Cultural Heritage Lists. The tradition is present throughout the Republic of Azerbaijan, and is perceived as a central culinary practice in all of its regions.

      Dolma is a Middle Eastern food created by Mesopotamians (ancient Iraqis), Levantine Arabs, and Middle Eastern Turks. And what is Caucasian cuisines? Middle Eastern people are Caucasians as well. Europeans who make this food make it because ancient Middle Eastern Arabs, Middle Eastern Turks, and Middle Eastern Mesopotamians all conquered Europe in ancient times and took Middle Eastern food to Europeans.

    Can you make armenian königsberger klopse, armenian spaghetti bolognese, armenian ratatouille, armenian burritos please. Because dolma is turkic and greek and not armenian.
