I agree big time with the speed. I set it to 500 for filter and espresso for 4 months now. Never touched the speed. Espresso was decent, then went to 800 and espresso got better and pour over went a bit flat. My wife definitely preferes slower speed for pour over. Espresso benefits for faster grind speed, less channeling, more texture, more consistent shot times. This machine is very quiet compared to sette, anything in. I've mentioned it before. If you have one of these. Go get a pencil deburr tool with small blades, metal handle. Then take the burr carrier out and deburr the whole thing. Lots of sharp edges and I think that messes with some and their espresso to pour over back and fourth repeat settings. I go between types often and clean in between, very consistent. It's my 4 settings to 65 for pour over. I'm not zeroed tho. Guess about that same range. I have the DLC espresso burrs. Silver is very nice. Easy to clean too.
4 months user now with the df83v. The thing with grinders in general is that the deeper you go down that rabbit hole the more you begin to see that there is no 1 grinder on the market that can do everything in top tier this is especially true if you do both espresso and pour over and vary alot between dark/medium/light roast coffee. This grinder comes really close and the magic word is SSP. The stock DLC Espresso burrs, i found them quite mediocre for lighter roast coffee. But df83v with SSP Multi purpose brings the machine to a completely different level. And then there is the cast labsweet burrs. These burrs can do magic things with medium to medium dark roast coffee elevating the cup taste to a whole different experience. So i would recommend for those looking for an end game grinder that can do everything to at least buy the labsweet and multi purpose burrs. Ideally you can try whoever sells df/Turin grinders to sell an extra spare part for a second burr carrier which makes the burr changing alot faster. Not much that can beat this setup for those seeking a somewhat end game setup on a relatively speaking budget
I need to get me some lab sweet burrs. If I make enough money from the channel this year to pay myself, I'll make a priority getting more burrsets to test and use for videos. I just have the SSP HU burrs cos I like clarity in my espresso, but those Lab Sweets... mmmmmmmmmm 😝
@homecafecharlie honestly if you want more clarity it doesn't make alot sense to keep SSP high uniformity. The difference between the stock DLC and SSP HU is only a minimal increase in clarity which is why some reviewers mentioned to just stick with the stock burrs because it's not really worth it to pay the big price for a minimal gain. The stock DLC are that good enough to be nearly comparable to SSP HU. No in terms of clarity and to sum up my own experience, the difference in clarity between the stock DLC and SSP lab sweet burrs was shocking. A huge jump in clarity which really surprised me and i needed time to adapt/like these burrs because i wasn't really used to high clarity. Aside from clarity, Lab sweet does something in terms of flavour which is hard to describe. They bring a unique enhancement which sometimes works incredible but for some Nordic style very light roast it does the opposite and blends a less exciting cocktail of flavours. So again it really depends how you are using the burrs whether you will like this or not aside from Personal subjective taste. The SSP Multi purpose is a crazy ultra high clarity burr which im experimenting with right now. Its terrible at dark roast. It's terrible at most medium roast. But with very light roasted high quality (usually the very expensive) coffee beans, damn it does crazy things. I never understood why coffee roasters were mentioning this crazy flavor notes like mangos, raspberry jams and stuff like kiwis and tropical fruits. I thought they had this wild imagination until i started these MP burrs, now i understand. 😅 It's also great for filter coffee where High clarity usually is preferred but that's a different subject.

I've made my DF83v for six months and honestly, I have no real complaints. I don't look at any other grinder with a hint of envy or fomo. Perhaps the front dial's a little stiff and I'd ideally like the espresso range to be a wider turning distance. But overall, it's just been a refreshingly pleasant and reliable experience. Even the bellows which I thought I'd hate initially, are almost enjoyable if you're a bit OCD like me lol!

078s burrs were awful for espresso in my opinion. I caught a lot of flack for saying so before it was released but once people started receiving theirs they realised I was right. It's a great build, but I sold mine and wouldn't consider it unless it had different burrs than the standard.
83mm SSP burrs aren't cheap! Cost about 50% of the stock grinder price for me. How much improvement do the SSP High Uniformity offer over the DLC espresso burrs? Is it really worth the upgrade?
I agree the Philos is nicer looking and is probably built better, but does it make a better cup of coffee. Then there’s the varia 6. Isn’t the flavour the #1 factor. Yeah, looks count, build quality, work flow etc. but I think most of us are chasing flavour.
Absolutely and the DF83V might be the best bang for buck in terms of flavour of any grinder. But being nice to use is part of it as well, and I like my coffee grinder to be a satisfying part of the experience. The VS6 has some workflow issues too that I'll talk about at some point, which just reminds me how much I enjoyed using the Mazzer. The differences in flavour are noticeable, but small between 64mm and 83mm burrs, and the feeding mechanism for the Mazzer is better thought out so the feeding rate is right for the burr size.

Charlie you analyzing grind distribution via the DiFluid is exactly what people need to do more with these variable speed grinders! Just saying that lower RPM produces a clear cup feels insufficient, seeing statistics to back this claim is what interests me the most. I really want a DF83V but the size scares me away, still rocking my DF64V with SSPs purely due to size.
Yeah it makes sense. The issue with bigger burrs is that the bigger they get the more scientific and accurate you have to be with alignment. Bigger than 64mm burrs needs serious work to get proper alignment, so that might be the sweet spot really.
Oh that's so hard. I think this wins just slightly in terms of raw performance, especially with the variable speed so you have another lever of control. But I love the build quality of the Mazzer... such a hard question, both are fantastic in different ways.

That's wild. I had the Niche and df83v side by side with a bunch of different beans. If it had been a blind test I could honestly not have distinguished them apart. The differences were so minimal that some coffee beans tasted exactly the same. This was with the stock DLC burrs

Loving expresso coffee but not being a complete connoisseur I'd like to try the SSP HU's against the DLCs before making the plunge.

DF83 any gen will be inferior to 83V because of poor chute design. Go with 83V.

At 800-900€, it's a bit (very much) too expensive for me. Hopefully we'll get something more affordable on the market soon, maybe the CF64V?
