Yes it sounds like Islam says my way or highway but please remember it is not a human saying that. All abrahamic faiths are of the belief that this world was created by One and only One Almighty Allah and it is His world, so His rules shall reign. The term used for non believers is KAFIR which means the one who has done KUFR which means denial. So there are no many names, infidelity is the characteristic that is associated with a Kafir because there is a strong principle here, the one who can deny or defy His Creator, can do so with anyone. Now that point about legitimate punnishments that can be taken against the non believers, this is precisely what those 26 verses are related to but all this is very conditional and subjective to the actions of the non believers. I they set out to destroy us or harm our religious framework we cannot be expected to sit back and watch, like warriors, we shall fight the wrong. But if the non believer is harmless to us and is busy doing his own thing, killing him would be a sin because in that scenario he is an innocent man. Just for the record, being born in another Faith is not somebody's sin because your birth is not in your control. So whoever has killed innocent non muslims for just being that have committed the biggest sin and shall pay for it on the day of judgement. For all you know they might have to trade their positions with the ones they killed.
