    Can we collect the raw cream for lets say two weeks and then once we had enough use it to make the butter or it will go bad in not cultured before?

    We make 6lbs butter day never have i warmed the cream to 60°

    About how long can you keep the sour cream before it goes bad? I dont use enough milk or milk byproduct to make butter from it, but if i could save it a couple weeks it might be worth it. Also, due to my weaker immine system, id bave to heat the milk or cream before culturing it or using it. Would thay negatively impact the process?

      If you're using raw cream to make the sour cream it depends a bit on how fresh it was when you made it. If you boil the milk/cream beforehand, the sour cream should last at least 2 weeks ~ Anja

      @@OurGabledHomeok and have you ever tried adding oats in raw milk for the fermentation ? it might allow the good bacterias to overcrowd the potential bad ones in the raw milk ?

    I’m surprised that you put your jar in the windowsill because sunlight killed so many good things in milk and cream. That’s why it’s always sold in shaded containers.
