      @@Silentgrace11 Yes! They pick such great employees, and it's totally understandable that people who aren't normally on camera, even for RUclips, can be a bit shy or awkward at first. Emily is just the best, I love her so much! She's a natural to begin with (being the writer, it's even funnier that she is so open and outgoing because the rest don't seem to be, but I don't know everyone who works for Mythical). She's witty as well, like Jordan (cotton candy randy Jordan, not sporked Jordan although she's pretty quick herself!). Woops, forgot not everyone who watches Mythical Kitchen watch GMM. Sorry!

    The creme brulee spoon thing totally does work by the way, I've personally done it a few times in a restaurant when we ran out of gas for the torch

      I need to watch that one back again, but if I remember correctly, the team here didn't quite do it exactly like you're supposed to, and that's why they thought it wouldn't work.
      I'm surprised they posed it as a myth, though, because i've seen plenty of chefs do the spoon trick for sugar.

      @JaySay63 from what I've seen, it *does* work, but usually it also ruins the spoon. So it's not a reliable thing you can do, just if for whatever reason you have an emergency need for creme brulee

    for the eggs myth: my grandma was a patissière in the 50s and she always used the rule of whipping 2 minutes per egg added so i was glad to see it hold up :')

      Ohhh that makes more sense! Like whipping one egg for 10 minutes may be overkill, but not if you add more. I can totally understand the more eggs the longer you need to whip, and that whipping longer is usually good unless you go too far!

    So I'm not even gonna lie... I've been watching GMM since almost the beginning so when this show came out I only watched because it was part of GMM but I'll tell you now I absolutely love this show and it has grown to be one of my favorites and is mostly (cuz not every episode but close) in every morning playlist I watch while I get ready for my day... The energy and connection everyone has together is awesome ❤️

    The reason you let batter rest overnight if you use an ale is because of the live yeast inside.
    You lose the physical carbonation from the beer, but the yeast makes fresh, new carbonation in the batter.
    I do this all the time with kefir pancakes, where I make the batter the night before, since I'm adding live culture from kefir into the batter.

      Even if you don't use beer its better to rest batter for a while, even better if its in a fridge. There will be slight fermentation from pre-existing bacteria and yeasts in the flour anyway but its more to do with flavour development and ensuring the flour is fully hydrated than anything which allows the batter to cook better.

    as someone who use to cook at a fish and chip shop, im not surprised the rested batter was better, we never rested batter on purpose but on a slow day where the batter had time to sit between customers for a while it definitely turn out nicer

    For Nichol's comment about Gordon's attitude; he does that mostly as an act. If you watch his episodes before he did Hell's Kitchen, he is super sweet and caring. He had a program on in the UK 🇬🇧

      @@aff77141 Yes, also Masterchef not the junior version he is kind with the contestants. He's not really yelling at them, unless they are trying to serve out raw meat at one of the challenges which makes sense to be upset by. He really hypes people up and has put one contestant through culinary school, im not sure if he's done more. But honestly he seems like an awesome person that just hypes up his Hell's Kitchen persona for views.

    As someone who has cooked lots of duck over my chef career, I can absolutely say that a cold pan is the best way to do it. I could always tell when a line cook didn't start with a cold pan.
    What's more important than the temp of the pan though, is aging the duck for 7-14 days to let the moisture of the skin come out.

    I absolutely LOVED the cheesy faux 80’s TV show intro - please keep it! Props to whomever created it! 🫡👏🤪
    Of note: maybe it’s just my Alaskan family, but when we cook salmon (plank grill, cold smoke, hot smoke, pan fry, oven bake) we never eat the skin. Our dogs however, consider it a most loved treat.

      The skin has tons of omega 3s! It's really good for you and so delicious if done right. But you have to actually crisp it up, not like they did it.

    Ramsey is an incredible talented chef who puts on a show for American television. Watch his older British shows and you’ll find he’s actually caring. Even his masterchef kids shows you can see he really wants people to succeed. It’s arrogant pompous adults he has no time for lol

    In particular with the the whip test should have been one bowl starts whipping and after 8 mins the second bowl starts whipping and you end with a 10min whipped bowl and a 2min whipped bowl what you ended up with is a 2min whipped bowl you let rest for 8mins after whipping and a 10 min whipped bowl. If this was just not conveyed well in the video then you should clarify it better in the future, love you guys!

    Josh scored the salmon in a very odd way. I've always been taught and seen it done in the other direction. I don't know that it would have had different results, just thought it was weird.

      I thought the same thing! So I went and watched Gordon's salmon video. He does score it in the same direction as Josh. However, Gordon's scores look about 1 1/2 to 2 inches in length. Where Josh's scores are the entire length of the salmon, which I think is why Josh's started to fall apart. Also, Gordon says to cook the salmon in a hot pan, allowing the skin to get a better sear. Josh cooked it on medium heat. The scores should allow for more even cooking so the whole salmon gets cooked through and achieves crispy skin. In the end, Josh's non scored salmon did achieve a crisper crust, but that entire crust came off when he cut into it. Mythical Kitchen needs to do a better job of testing this one.

      @@andygertz Do you know if they followed Gordon's recipe? Because I cringed when they started cooking it skin side down in butter. I already immediately knew they'd ruin the beautiful crispiness by doing that. High water content in butter = killing the crisp.

    The cold pan for the duck works great, I think with the hot pan, he is probably thinking of a searing hot pan, where as your hot pan didn't seem that hot, there was barely any sizzle when that duck when in

      That's what I was thinking, too. There's a reason why every chef that cooks with duck has used that technique.
      I've never cooked duck, but i've seen it 'fail' before (where it doesn't render quite right,) and it's not that hard just to watch it for an extra five minutes or so. Much better eating experience in my opinion.

      @@JaySay They us it because chefs in general have to cook for masses. They likely can hit timing down better. I find that much of "chefs do it this way" comes down to the volume they have to do and less to do with what comes out better for taste.

    The cold pan on the duckbreast is absolutely not a myth, and you probably tested it wrong, but there is a MASSIVE difference between the two

      This! I was taught to start it in a cold pan and then GRADUALLY raise the heat, not start in a cold pan and then jack it up immediately 😅 lol

      They usually made big, simple mistakes in their testing that change the "myth" results. One per episode I think? Their pan wasn't even all that hot when they put the searing duck in. Barely a sizzle more than the cold pan that had none.

    I think with the first one it was probably pan position that was preventing the crisping up of the skin, with one being more submerged in butter it was less crispy.
    The difference also didn't seem to be that much because when it was cut into with the spoon it kind of flopped away from the meat and then had to be pulled off, that still isn't really crispy...
    Really tasting should be done blind so you don't know which is which.

      What made the skin soggy is that he flipped the skin back down in the pan, just cook the salmon skin side down, flip it over turn off the heat and let it rest untill it's done.

    As a professional chef for almost 30 years I could have told you with absolute certainty that resting your beer batter makes it 100000000000000x better. My restaurant will actually stop serving battered fish and shrimp if we have to make a new batter for the day.

      In Australia a fly on the batter from yesterday is just about the best indicator of a good fish and chip shop. Brits love their fish and chip shops but complain about how oily it is. Most Brits rave about fish and chip shops in NZ and AUS because they aren't oil soaked.

    10:47 something I just thought of: Nicole should not have begun until Lily was at 8 minutes. The way it was done, Nicole’s batter has been resting after beating for 8 minutes, and it is unlikely a realistic scenario.

    I always marinade my salmon in lemon juice and fresh ground pepper for like 15-20 minutes, then dab it with a paper towel to get most of the lemon juice off before frying it in a pan
