  • Chicken Brine Recipe | Brine for Chicken | Part 1 - This Chicken Brine Recipe is made with Lemons but you can use Oranges, Honey, fresh Herbs and Spices, and this technique produces a juicy tender chicken every time! A foolproof way for succulent and flavorful roasted, smoked or fried chicken. Part 2 will be the showing of the rub and roasting in the oven. The secret is out so enjoy!

    Chicken Brine Ingredients
    8 cups water
    1/2 cup kosher salt do not use table salt
    1/4 cup honey
    3 dried bay leaves
    5 cloves of garlic smashed and peeled
    1 tablespoon whole black peppercorns
    3 sprigs fresh rosemary
    3 sprigs fresh parsley
    3 sprigs fresh thyme
    2 lemons sliced
    4 lb whole chicken

    I followed this brine recipe today (i'd never brined a chicken) this seriously was the best chicken I've ever had. It was sooo tender and juicy I could cut it with my fork. My family and I devoured it...I just wanted to say THANK YOU!

    Been brining my fowl for years but I used equal parts salt n sugar. I’ll have to try it with honey now. I’ll also have to try the thyme n rosemary, I do garlic n onion powder with chicken bullion. Looking forward to part 2...

Second of all, I have a Christmas potluck on Saturday with the fam, and I’m supposed to bring roasted whole chicken...so basically I hope you upload part 2 before then 😅😅😂😂

    I did a whole chicken, but cut in pieces already. Left it in the fridge for 2 days and cooked it on the gas grill. Came out excellent. I could taste the brine flavor in the meat, which I don't think I ever had... no matter who makes the chicken. I would give this 2 👍🏼 up. Thank u for sharing!

    WOW, Man, I'm terrible with whole Chickens, I always end up uneven or dry and I need to drown it with gravy to cover my shame... NO MORE!
    I did your brine before smoking it on the grill and it was PHENOMENAL! the entire chicken was moist and tender with amazing deep flavor and the next day the smokey flavor even made it better for an amazing chicken salad!
    AB you saved a soul today.

    AB. Thank you for all you do. The water...I do this technique when I deep fry and find it worked well here too. I put the chicken with wrapper still on in the pot. I add enough water to cover the chicken. I then remove the wrapped chicken from the pot. Due to predicted evaporation I add roughly a cup more water. Then added the seasonings following AB’s process, when I added the chicken it was covered by the seasoned water versus diluting the water by adding water to what was seasoned.

    AB, I used this brine along with the part 2 roast video exactly like you showed it, with a 3.5lb pork butt for Christmas dinner with the family. I brought that, a pan of mac and cheese, and I made some flour gravy with the drippings! This was a big hit dish! Thanks for sharing.

    Thanks AB, I’ve always heard of people talking about brining and recipes there of but your the first that I’ve heard mention to bring it to a boil first then let it cool. Your explanation makes sense...boiling the ingredients def infuses/ marries all the flavors together as appose to just a cold brine if that makes any sense. Thanks again

    I've Brined my Thanksgiving Turkey for 20 years, I got that from Alton Brown, then fifteen minutes at 550° to quickly seal the bird,then slow and low...What's your cooking technique the Chicken after the Brine AB?

      For this one it's the oven but I actually like to smoke then Low and Slow. It's just not the right time of the year for that.

      Video shows to brine a turkey at least 8 hours or preferably overnight which I typically never plan well enough to hit that time - but, it really makes a difference even when I brine for 3-4 hours. Love to see how much flavor you get when brining that turkey for 20 years. Dedication! Kidding, but appreciate the cooking tips to seal in flavor first then low and slow.

    Thanks for the recipe. I ended up using this for 2 cornish hens, and substituted honey for pure cane syrup. After 2 days in fridge, I smoked the hens on a pallet grill at 275 for 45 min, then blasted them done till a 165 temp on high heat, 400 to brown and crisp about 10 min. Finished with a peach BBQ sauce. mmmmm Thanks again!!!

    The master chef back in his lab creating goodness for the holidays. Nice brine mixture, AB spray your cup or measuring cups with nonstick spray when using anything sticky like honey so it will all flow out of the cups with ease. I do a light brine when I cook chicken.

    How do you incorporate brining with frozen chicken? Do you brine before freezing or after while thawing or not at all? It's cost effective for me to stock my freezer with frozen meat that was purchased on sale. Thanks for any helpful advice!

    This looks good. What can I use if I can’t get Kosher salt? Will coarse sea salt work?

    Never brined a chicken before. Today will be my first time and I’m using this recipe. Simmering the ingredients now. Then I’ll let it sit and brine for 24 hours. Looking forward to giving it a go!

      I brined chicken breasts this week. My big mistake was letting it brine 24 hours. What i learned, the longer you brine, the saltier the meat. Should have only done it 4-8 hours. Then baked the chicken breasts.Still trying to figure out how to use up the oversalted chicken breasts! Cost of meat these days, just can't throw it away. Guess will try small recipes to use up all the breasts without adding more salt to the recipe. Some kind of recipe that uses large amount of broth, like soup, to help disperse the salt out of the chicken!

    I just put my chicken in the brine. Looks like a great recipe. I'm going to try air drying the chicken for 3 days in the frig after brining it before I roast it.

    Thank you for the recipe! But I'm a little confused. Video says to use 1/4 cup of Kosher salt but I used 1/2 of Kosher salt because I was following the directions on the description section. Can you please clarify how much salt to use? I'm worried my chicken is going to be too salty now. 😞

    I have to say I love your video's and have been a crowd favorite in deep frying my turkey and then I used a brine and did it in the oven like Alton Brown said and I was now a God... But to do chicken on the smoker like this???? You have helped me to keep moving forward,,, I have down beer can chicken on the Grille,,, Now I am going to do your legs brined, Two beer can chickens brines and as many quarters my smoker can hold.....     In all my years I have never browned any kind of chicken. Now that I am eating a lot of chicken because I’m cooking for one I’m looking for different ways to make it taste better and stumbled across brining… I enjoyed your video very much, I am not a fan of rosemary simply because someone made rosemary bread once and was like eating a Pinetree but they may have put too much in it. The only thing I would’ve added is to not assume that everybody has fresh herbs and give them the dried amounts along with fresh. I will have to wing it about how much dry ingredient to put into the pot and I will put in just a little bit of rosemary and it will be dried. Hope I don’t hate the taste… Lol… Truthfully this was the best video I’ve seen all night

    Once again another excellent video advising people how to make food fun and tasty. Brining meat & poultry is a method which isn't used that much or even known about over here in the UK, but I've been doing it for a while and I swear by it. The only method I would choose to do differently than yours would be to place the bird upside down for full breast coverage. Either way this bird is going to taste a lot better after brining.     Appreciate your videos brother. I'm not really a fan of wet brine. I prefer the dry brine method. I've tried both and to me it's simpler and less waste and mess. I usually just put my dry rub on the bird with salt and stick it in ther fridge for a day or overnight and bam! Comes out super juicy no matter if you smoke it grill it or put in the oven. Have you ever tried this method AB? I do this for chicken and Turkey.

    I brined a turkey for the first time for Thanksgiving and OMG! I will always brine my turkey from here on out, so I started to wonder about brining chicken and found this video. Guess what I will be doing tomorrow. Brining a chicken.

    Yes I seen a a recipe on jerk chicken it have me brine for 24 then made jerk past from scratch then let it marinade for another night then grilled came out amazing just like the Jamaican restaurants every since then iv been brining my chicken everytime I grill chicken or pork chops it really help with the flavors with the marinades I see how good restaurants that sell grilled chicken be so good brine keep the meat from having a blan flavor sometime the marinade ain't enough especially for thicker chicken breast
