- Hi Guys!
Thank you so much for tuning in! I am so excited to share my Persian Kabob recipe with you all! This is a great method of making Persian Kabob (Koobideh) indoors, especially with the upcoming cold season right around the corner.
This is a great method if you don't have access to an outdoor grill, or you just simply don't feel like grilling! :)
Here are the ingredients that I used:
2 lbs Ground Beef
2 lbs Ground Lamb
2 Onions
1 bunch Parsley
2 tbs Sumac
1 tbs Turmeric
2 tbs Liquid Saffron (Optional)
1 tbs Salt
1/2 tsp Pepper
1/2 tsp Baking Soda
Zest from 1 Lime
This recipe is good for 4-6 people. If you are cooking for less, just cut the recipe in half.
For step-by-step instructions, please refer back to my video :)

Holding peeled onions under running tap water for a few seconds prior to cutting or grating will keep tears from forming in the eye. A tip from my beloved mother. Bless her soul!
also you can chill the onions in the frig for an hour oe two before cooking

Absolutely love adore Persian Food
Thank you
Hello Tara, last year I made a trip to Iran and it was the time of my life. Love your people, love your food and love your culture. I'll definetely try out this amazing recipe and feel a little nostalgic.
What a great share.
I hope to visit Iran and Iraq in the near future.
Having lived in Nevada for most of my adult life, I had a variety of ethnic friends and 1 that was born in Iran, Persian + Sicilian and Jewish 😁 - and he is one individual that ya have to understand heritage and really know, to capture the true essence of his Wisdom and Heart, cause the surface truly would fend off individuals that haven't had the flavor experiences of true ethnic diversity lol
I adore him and I feel the Peoples of the Near East are abundant in the most beautiful Women on the planet and handsome men as well.
The Ancient Persian energies still flow through many of the modern Persains. Particularly those whom aren't constrained by personal Fundamentalist Ideaologies - very much like where I presently live, in Dixie/Tennessee.
Fundamentalism is the same, regardless of the choice in Belief - the far right will always be on the far right - anywhere on the globe.
I merely respect each their choice.
Any recommendations on accommodations, and/or recommended contacts such as: Advisors/Academics re: Historical Locations.
Just the idea of it gives me butterflies, I'm so excited!
@@bethbartlett5692 Hopefully you’ll be able to go there soon. I think it will be a great experience. Safar bekheir!

Beautiful Persian lady. Beautiful family- just a short glimpse of the husband and son. All round clear, articulate and step-by-step explanation of her expert cooking art. And last but not the least, a masterly camera work and video production. Please keep it up Tara. You are the tops!
Parnian Payvand thank you for your kind message! It really warmed my heart!
A great video! Ty!! I am learning to do many dishes from Middle Asia region. I’m a British Lebanese in London UK and very much a foodie. Your version of the Persian Kabob done in a frying pan is a great idea! I will try it and feed back my comments x
Thank you for posting this recipe!
I'm Persian and this is pretty different than your traditional kebab but it's nice to see your personal twist on it. The parsley, sumac and lime zest must brighten it up a bit! ☺️
You might already be aware of this but the parsley onion mixture is very common in the nearby Arabic speaking countries. They usually don't use spices in their kabobs other than salt and pepper though. Iranians tend to put a lot more in their mixture.
Clever idea. I may finish them in the broiler. Thank you.
Hi Tara, thanks for showing such an easy favorite. I’m Ukrainian and my husband is Iranian. With Covid quarantine, we’re sick of everything! So this will seem like we went to a Persian restaurant! Merci, Khanoom

Nicely ,easily ,deliciously prepared kabab thanks from panjab india
This is so Helpful. My most Favorite dish ever. I enjoyed it.😀
I would love to see your version of lubia polo . I think you are an amazing cook from everything that I have seen so far. Thank you so much for your videos!!.
Wow! Looks delicious! This is an easy way to cook the koobideh. Is the saffron a very important ingredient? Is it ok not to have saffron esp if I can't find it.
Thank you! It is definitely ok to skip the saffron! The taste is very subtle so it will not make a huge impact on the recipe :) Enjoy!
I’m so excited to try this! My Persian fiancée will be so happy I tried making this in quarantine. I would be interested in seeing a khoresh bademjan recipe! That is my favorite dish :)
Aww my fiancée is persian too
Very delicious 😋😋😋 thank you🙏🏻🙏🏻🙏🏻
Hi!! I did your recipe today and my family loved it 😊😋🥘thanks for making this recipe 🥰

Thank you for taking the time and translate the recipe into measurements 😂. Anyone not familiar, Persian mothers are inherently ninjas in the kitchen. No measurements, all freestyle so you need to take notes and fine tune the exact measurements. No easy task. Appreciate your video. Fesenjoon next?
Thanks for the kabob lesson. I don't have a grill so this technique is useful to me.
Thank You Yum Yum Yum can’t wait 🤩
You are perfect!!! I wish you filmed more often!!!
Adri-Wan Kenobi working on giving you all videos twice a week!
You have a nice complexity of flavors with lamb/beef, saffron, sumac, turmeric and lime zest. The baking soda is used as a secret agent.
Very clever. The cheese cloth wringing of the onions was a professional touch. Can you make some yogurt sauce? My mouth is watering
Just thinking about this recipe. Well done.
Please please post more videos you are an amazing woman!! Thank you for sharing Tara !
Thank you so much for this recipe, I can’t wait to try it. You are awesome 🙏

Tara!! Can you show us your koobideh morgh recipe? 😊
I like your cooking show Tara😍, thank you for sharing your cooking experiences with us. I am Persian too😊.
Hi Elena, long time ago I ate Kabop in Original Persian Restaurant and the taste was amazing. I was wondering if this recipe is 100% Persian. I would like to make it at home. Have a great time!!
I kind of just started the video but I really have to ask. Are those really medium sized onions? They look huge to me. I need to know because not all recipes have images and I have always assumed medium sized onions being 80-100 grams or so.
I like the technic very nice 😘
It is good you came back.
Helpful video and thank you for walking through the steps!! Can I make this with just beef?
Nice! My husband is Persian and I would love to see a good recipe for saffron rice pudding. This pudding is his favorite childhood dessert.
Best,
Anna
anna ardesh yummmm! I love sholezard!!! I will definitely post that!!! Great suggestion!
Can this be cooked ahead and Vacuum Packed to serve oneself later.
Love your videos Tara. Please make these videos once a fortnight. Please share joojhe kebab and duck fesenjan. I would also request some modern Persian fusion recipes.

Let me take a wild guess: You live in England!
@@melbahrami3389 yes Mel. I live in England. I love Persian and Middle Eastern food hence requesting some recipes to understand the technique and ingredients to make the dish authentic
I can't wait to try making this. It looks delicious. Thank you and keep up the great work. :)
You said 1teaspoon baking soda but you wrote 1/2 teaspoon ... How much should I put?
Kheyli khoshal shodam ashpaziye gole shomaro peyda kardam. Man alan 10 saaale america sendegi mikonam. Pedaram tuye alman be man yad sad che juri kababe koobideh tuye fehr dorost konam wa ye tokhme mohr add konam. Mishe kababoe koobidaro ruye stove ham dorost konim ? . Kheli mamnoonam

While watching the video I notice you have put baking soda. Do I put baking soda even if I put the kebab in seekh
Hottest chef on the internet.
I can’t wait to make this!! Btw, your kitchen is amazing!
Why do you use baking soda for color?

❤❤❤❤❤❤❤❤מהממת
Thanks for the tip for the saffron water .. I always tried dissolving the saffron in warm water and I never got that beautiful color
It’s probably fake saffron from China. Never buy saffron from non persian stores. Make sure it’s from Iran.
khaili nazi ..va khoshgelin ..
When I’ve made this a much water gets released initially.. an I doing something wrong ? Ty
Can't wait to make this!
Thank you!
Why you use baking soda for??
Damet garm hach khanoom!
So helpful
Woow amazing kababs in fry pan
Love to watch ur video
Show how to bake in oven this kabab
❤️
Oooooofffffff looks amazing!
Hi! What is the proportion of meat and fat? Does the meat need fat in it ? I find sometimes it comes out stiff and hard without fat! Thanks!
It dose need fat for sure , around 25 percent fat is good. I use 1/2 beef and 1/2 lamb for kabab and the lamb meat should have Enough fat. Meat around ribs is good for that. You can also switch beef with turkey breast.
And i should mention that aside from fat, the amount of onion you add to meat is important too! Not enough onion can make kabab stiff and too much onion will make it a disaster!
Looks beautiful, now show me your house it looks pretty too I love your style take care
I would love if you did a video on olivieh salad. (I don't think I'm spelling it right)
Oh oliviye is a French salad that somehow got her way to Persian cuisine
I will make a video for you in my channel
