When Ross later says that nothing on that list could make him not like Rachel, she replied that imagine everything bad you think about yourself and then imagine the one person you love and trust listing them down and also says that she would never make a list like that about him. I think therefore in this case Rachel is right because if I found out my significant other listed all my cons, not only would it highlight my already existing insecurities but it would create new ones too.
