That isn't how it's done in real life where you're not doing it specifically for a restaurant with a tool designed for it specifically. The suction of the conch shell keeps them. You use a knife not a hammer, and people from the Bahamas actually know how to this properly - he's clearly not so experienced.
Actually in restaurants we waiste tons of food and meats in the name of time. If we can zip-zap clean/debone/filet something fast and get 80% its cheaper then nitpicking at something and paying the staff more per hour or needing more staff to do the job. The wasted food is cheaper then more hourly wages especially these days
Only by this guy and people like him. Everything on it can be used in some way. The shell, guts and foot are the parts not eaten by us. 3:44 Conch slob can be used for conch fritters (the flabby flat bits) and other dishes. I don't eat the skin or cook with it but you can do a lot with it as long as you preboil it for a long while and then grind it in a food processor before using it to cook with. It'll still be tough and chewy tho. Good to add to mushy soft foods with not much texture like grits or rice. Conch and grits is so good. The guts/butt is discarded. Throw in the garden or tossdd overboard as chum for the fishes. Shell used for jewelry. Ornaments etc. Shell can also be crushed into a powder to enrich the soil. The hard part on the foot can be made into jewelry etc. On the male conch some people pull the penis like organ out and eat it raw.
I'm making ceviche for mother's day. You just rescued my plan. Thank you!
Thanks for the video
Wow, all that removal for such a small amount of meat.
Caribbean people boil it or pour hot water to get the meat
I use a butter knife and punch a hole by the spiral. :)
I hate when people do this. It makes the meat rubbery.
I prefer the queen conk, lived on grand bahama island for a few years, had the best conk salad there.
I saw one on top chef being extracted with a cork screw type device. They never had to break the shell.

I never clean the dark part is that OK
There's no way this guy is a chef.... Chef's wouldn't waste that much meat. The dark parts are edible, as well as the hipatopancreas.
Michael Westen
I just saw the video and i couldnt agree more.He wasted so much meat
He isnt a good chef at all

Most should come out by setting salt around the shell and some of the conch should come out of its shell as I noted from another video.
Did he just slice the live snail??? 😭😭😭
"Most are stubborn and don't like to come out easily".....Uh, probably because he's not into being chopped up and eaten 🙄 🤷🏻♀️
you’re such a troll, it’s necessary knowledge to eat the snail
How can someone in your profession be working with a dull knife?! The dark meat can be scraped off and you get more meat.
I feel bad for eating conch now lol
After cleaning there, there is not much left of the conch..😂
Ok so basically 90% of the conch was wasted, cool

This video is horrible. Such a waste in so many ways. I truly hope anyone looking to prepare conch looks for another video.
I never saw a chef with such a dull knife. Geez!
God you must have been a student because you made this look like actual surgery compared to just...removing the near.
My type of video.. gets right into the shits
Absolute foolishness.
How cruel ,would you like someone forcing you out of your house with a hammer?
