My question is how did he know to use Alum and in the Alum being the solution, what was the cause?

I believe he tested three different solutions on three samples of the water and alum was the one that cleared the water in the sample jar.

Alum creates positively charged ions when reacting to water. The samples contains mostly negatively charged particles, which are attracted by the positively charged ions in a coagulation process. Had the particles been mostly positively charged, the gypsum would have helped.
