3rd person arma flying isnt hard at all. This is coming from someone with over 30k hours in arma from Flashpoint to Reforger. First person with Track IR or Tobi , pedals and stick is much more skill. This is basically battlefield flight!
Most of what you see is modded content. I know the Blackhawk interior needs work and more variations, as the mod author that is on me. The map he is flying on I believe is modded. The vanilla content is a lot more high quality and looks a lot better. Having said that, you are just choosing to hate on the game, it looks nothing like 1998.. I find 3rd person very much more difficult and I played Battlefield before coming to Arma
