Hi! I used 2 baking sheets, just right next to each other - middle rack. You might need to adjust the baking time if you are planning to use the top rack too. I'm not sure how long it might take, but I would check at the 20 minute mark if it reached the desired color (don't open the oven door) and eyeball from there (set a timer so you can replicate the results). It is cashew-meringue so it's okay. Try to remove one "sacrificial" meringue, if it doesn't peel easily then it means you have to cool it some more. Two egg whites in this recipe would yield 24 pcs - 2 inches in diameter so when you sandwich them, it becomes 1 dozen silvanas. :) Don't be shy to leave a comment if you need more clarification. I noticed that you put in white sugar for the buttercream filling, while in the ingredients you said it's powdered sugar. I wonder if it makes a difference?

Hi! I usually chill freshly made silvanas for 30 minutes to 1 hour to make the filling firmer before serving them. I store silvanas in a sealed container in the freezer, it will last for a long time and will retain its crispiness, but I suggest consuming it within 2 weeks. ❤ I hope I was able to help. 🤗

Hi! You can try to observe the change in consistency (check video @ 3:00 onwards) if you don't have a candy thermometer. It is a lot safer if you use a candy thermometer or a food thermometer though since we're working with raw eggs. I hope I was able to help. 🤗

Meringue is meant to be crunchy and crispy, other wise if it’s soft/chewy it would be undercooked. U would probably need to use another cookie base
