[Kimchi EP#09] Why is this kimchi called Bachelor Kimchi in Korea? Chonggak Kimchi/Ponytail Kimchi

  • Chonggak Kimchi is kimchi made by marinating altari radish with radish leaves and a mixture of spices such as red chili powder, fish sauce, green onion, garlic, and ginger. Altari radishes are smaller than regular radishes and have softer radish leaves.
    When we say Chonggak Kimchi, Chonggak means bachelor in Korean. The radish shape with radish leaves is similar to the hairstyle of men who were not married in the past in Korea, so it is called Chonggak Kimchi. The key is to marinate the radishes well when making Chonggak Kimchi more than anything else. Radishes should be marinated whole without chopping to prevent delicious juices escaping from the radishes
