    In this episode, I will be joined by Joan Coukos, founder of Chocolat Moderne (NYC). As I’ve written in other posts, one of my favorite episode formats is to interview a chocolate maker and taste and respond to their work. This is a special treat for me.
    I first crossed paths with Joan around 20 years ago and my recollection is that I visited her first workshop around the time she started her business back in 2003. Our paths crossed pretty regularly over the decades, both of us witnessing the changes in the chocolate scene in NYC and around the country.
    Today, Joan’s workshop is on the same floor (9th) of the same building in Chelsea, and CM’s work today seems as fresh and timeless as it has been from the very beginning.
    We’re going to be discussing the early years, what it takes to maintain a successful business in chocolate spanning three decades, and take questions from the live audience.
    Episode Format - What to Expect
    The first half of the episode will be spent in the interview with Joan. The latter half will be spent in the tasting - which will feature CM’s recent Umbrian Gold collection, a collaboration with Chef Marc Murphy that uses Chef’s newly-introduced olive oil. I will have both the chocolates and the olive oil to taste. I had my first chocolate/coffee tasting recently and I am excited to add olive oil to the list.
