Vegan Dim Sum Turnip Cakes
(Makes 8-10 servings)
Daikon Filling:
1/2 pound daikon radish, cut into shreds
2 cups liquid, reserved radish liquid + water
1 tablespoon+ 2 teaspoons sugar
1 1/2 teaspoons salt
1 tablespoon vegan chicken powder (link: amzn.to/2kxTq2n)
1/2 teaspoon white pepper
Batter:
1 cup rice flour (link: amzn.to/2kybGN7)
2/3 cup cornstarch
1 1/4 cups water
Vegetable Filling:
1-2 carrots, finely dice
1/3 cup dried shiitake mushrooms, rehydrated and finely diced (amzn.to/2jC1nn8)
1 1/2 shallots, thinly sliced
4-5 stalks scallions, thinly sliced

1/2 teaspoon minced garlic
1/4 teaspoon sugar
For Textured Vegetable Protein:
3 tablespoons textured vegetable protein (TVP) (link: amzn.to/2junP4d)
1/8 teaspoon salt
1/4 teaspoon garlic powder
oil for frying

I think this is the best method I've seen on RUclips. I usually dump rice flour mixture into turnip that's cooking in a wok but it gets hard to mix.

Since becoming vegan, I've looked high and low for a recipe that produces a truly authentic radish cake, and yours seems to perfectly fit into place. I’ve never had daikon. How similar is it to a purple/white turnip? I really want to try this.
Can you substitute turnip root for the daikon? I cooked with daikon once and it was so strong through the whole house, I had a hard time airing that out.

Hi! In your recipe VEGAN DIM SUM - CHINESE TURNIP CAKES!!, I was a bit confused with your ingredients when it came to CARROTS. the recipe says 1-2 carrots. That was not helpful. Carrots come in many sizes, they can be 6 inches long or 4 inches long and the width is also different. so how much carrots should I use? This is now a guess work. Better to mention 200 grams or 1 cup, and that would have been helpful. Thank you.

Cornstarch is a binder and makes the product have a 'gummy' texture. There are cornstarch varieties too. :)
