Beef tenderloin roast . Cut up for filet mignon. Much better than Kansas city steak company . And cheaper !!

I recently bought a package of NY Strips. My brother and I cooked up 2 of them and OMG, those were two of the best steaks we've had. So juicy, tender and so very tasty. I have more in my freezer and will be cooking them up again soon. Then back to Costco for more.

It’s important to look at the labels at Costco. If their beef says mechanically tenderized, it’ll also tell you to cook it to minimum internal temperature. That temperature puts it at medium well, crowding well done.
Be sure to double check the stickers at Costco! Sometimes the actual cut of meat and the sticker are not the same. We addressed the issue with a manager at Costco after it happened to my mom and they say that there are people that peel off and switch stickers so they can get more expensive cuts of meat for a cheaper price. I've seen it happen at other places, just never imagined it would happen at Costco considering there's a charge for membership and high traffic in the meat area

For the love of God stop buying tomahawks your paying for all the bone it's just a ribeye
For the price of 4 tomahawks I can buy the whole ribeye loin & get 10-12 steaks or 6 steaks & a prime rib out of it

The ribeye steaks are not worth the money any longer because they cut the cap off, which is the best and most tender part of a ribeye steak, and sell that off at a higher price as cap steaks. Cap steaks on their own are really rich with a lot of fat. Not sure if the butchers at Costco take requests and would cut ribeyes with the cap on though.
We buy their lamb chops and pork boneless pork chops. They are beautiful and the price is so good. We can get two meal out of one pork chop, depending on how I'm fixing it and one loin lamb chop each is plenty. Their boneless leg of lamb is a really good buy also. Their beef brisket is a great buy. They are huge and we cut into thirds or fourths depending and freeze. Braised brisket is a wonderful meal. Also makes great sandwiches. I like to get Choice grade. Not a fan of Prime unless it's the beef roast for Christmas. I get a BIG one because by the time I age it and cook it , it shrinks quite a bit. It's horribly expensive but for one time a year, so worth it.
We like their breakfast sausage also. Nice size and really plump and juicy. We got a great buy on ribeyes a couple weeks ago. They were trying to sell them, we bought on the sell by date and got 4.00 off per pound. They are HUGE and really thick and well marbled. One steak for two is perfect. Even had some left over for a steak sandwich for lunch.
As for the prepared foods? I pass.
Costco's lamb (both the chops and the boneless leg of lamb) are extremely lean and kinda tough, which takes away most of the fun of eating lamb. Makes me think those Australian herders are just barely feeding their lambs, not doing any fattening. The French Cut lamb racks, OTOH, have better fat content and are quite tender, albeit expensive.

To me tomahawk ribeyes, or really any bone-in cut of steak is wasting money. The old adage goes that the bone adds flavor and tenderness to the steak. From my experience, I find that questionable at best. But what can't be disputed is it adds $$ to the cost. If I'm going to pay X amount of dollars per pound for my steak, I want it to be all meat (ok, and some fat as well), not meat and bone.
I love Costco. I go there all the time, for a variety of shopping needs. From all the fixings for chili to my dogs' teeth brushers, it's just a great place for value on regularly used items.
Just not their steaks. Used to be great, but the quality of the meat's gone down significantly in the last few years. Not all the meats, mind you. Anything for the smoker... I buy brisket packers there, beef rib plates, standing rib roasts, whole chickens, that huge log of pork loin... if it's a smoker cut, it tends to be good. Also can't beat the ground beef, 7 lbs of decent quality, can pick up ground pork anywhere to add to it. But the steak's been slacking. At least on the grill. I have been experimenting with pan-searing and might give those filets another try. I also would bet that the packer cuts are worth the price, that's another soon-to-try. Especially good if you pick up a Vuc-u-saver they conveniently offer. Portion your steaks, seal up the ones you aren't using and stick them in the freezer.

Why would anyone buy choice when they could buy prime for just a few dollars more?
I have noticed over the last few months that the rib eye steaks at my Costco location contain an increasing amount of gristle
Sometimes I wonder about whether if they are properly grading the meat. At times they look rather lean. It looks like it's standard grade instead of choice.

I have a friend of mine who is a carnivore actually she is on RUclips the carnivore doctor and all she eats is red meat and this is consistently good me I love it. Never had anything bad. And it's also the best price
We like the rib eyes (tomahawk a little pricey for us). The rib eyes can be "tough" but using a meat tenderizer to smash them results in a tender, delicious cut. We also like the lamb options but the "frenching" is unfortunate because you lose a lot of tender lamb fat...otherwise great.
Try a reverse sear. Basically put it in the oven at 225-250 until the internal temp is at desired. Then get a pan screaming hot and torch that thing
I've never had a steak from Kansas City Steak company that's been any good.

I recently got a Costco membership and started buying steak there. I've tried NY, ribeye, and sirloin and all of them were terrible - even the "prime" cuts. The steaks hold so much water weight which prevents you from getting a good sear, and on top of that, they lack a truly beefy flavor and have a good amount of gristle. I went back to buying steak at Wholefoods and it's quite the difference. Definitely worth the extra money. Wondering if others have a similar experience or if I should perhaps give it another shot at Costco. I do recall reading a Reddit thread where people were basically saying Costco beef is terrible quality.
Glad to know the ducks were raised humanely. Now cut 'em in half and let's eat some orange duck!

I avoid cuts of beef from Costco, prime and choice. It is all mechanically tenderized unless you buy the primal cut before it is processed by their butcher.

Prime and Choice (as well as the wagyu label) are entirely different and FDA-regulated classifications from “tenderness”. They pretty strictly relate to grading steaks for their marbling

The wagyu I bought was certainly the real thing. No fault of COSTCO, but it was like eating a sponge soaked in oil. I prefer the prime meats they also sell.

Wagyu beef are awesome! Very pricey but it’s worth it , yum yum ,only for a special occasion 🫶

might have been $80 for the full roast but $100 for the steaks, usually the full cuts run cheaper per pound
How interesting you focus and poo poo on the sodium content on products you recommend against buying whereas the ones you approve of show just as much sodium and percentage of daily intake recommendations.
somebody that spends that much on a steak should at least have enough table manners to get the fork in their mouth right side up!!!!
