My apartment has alot of dark charcoal furniture, black and white decor and art, I've found a good air purifier really keeps dust and in your case cat hair, almost dust free. I get the charcoal and HEPA filter
I agree on grouping items together, but it is also important to know that the styling looks best in groups of threes.try it, it works. Iam a visual artist and I use this simple rule in my work.
I'm also not a minimalist, I tried first with the kitchen empty counters and walls, I really get anciety and did't want to go in the room was litterly awful. The only thing I am not putting anything on is, cabinets that was a relevation. These looks better when empty.
