They are beautiful knives with great fit and finish but only use them for soft vegetables on a soft cutting board, the uhc edge is way to brittle, maybe the tempering has changed for the better. I chipped the edge while boning out an elk. I re sharpened the edge and had to make some kindling and notch some wood, the pine wood turned the edge into what looked like a saw blade. It does get a scary sharp edge but it's a fragile one. l keep mine for sentimental reasons but if you are going to hunt stick with something you can rely on no matter what circumstances you may encounter.
I have there Kitchen knife.Its the biggest load of crap.Had to send back >edge grind never even went to end if blade.Wood handle Very Poor fit.Like cheap home made!!.....Blade was STAMPED out.....VERY poor Finnish.....NEVER would I buy this home made knife again!!!
@peter pam: seems to me you bought a cheap chinese knock-off instead of the real stuff - Roselli is known for perfect manufacturing - look at the video.

I have an early made one and my experience has been good so far with green wood working and light batoning, no issues and the edge is still fine.
On their website you can read about handling with UHC, you better not use them with bones or similar hard materials
