Idk why ultimasaurus never in the final figth uses he's jaw to attack or bite just he's arms, tail and horns , what makes me think that this ultimasaurus its not experienced in Battle like the other ultima that faced an ankylo, triceratops, Trex,spinosaurus and indominus rex.
