I've found a few pearls in oysters at the bar over the years! They're usually quite small, like a chubby fingernail clipping, and they're not uniformly shiny, they can be quite matte or stripey. But it's still cool to find one!
according to the pearl farmer I follow, it takes about 4 years for a (Tahitian) pearl oyster to be able to make a pearl, and then it takes about a year for them to be able to take the pearl out. Granted, that's a cultured pearl, so they implant a nucleus instead of waiting for a parasite, but I imagine it's much the same process for a natural pearl. As far as the parasite, pretty sure it dies after the first layer.
Fish aren't really a taxonomical group, but rather a general term we slap onto anything that lives in the water. They're as much of a fish as a horse fish, jellyfish, or starfish.

Farming pearls are done by putting a bead in the oyster. Commercial pearls are as large as they are because the inside is not pure pearl, it's mostly plastic bead.
