Instead of pressing the air out of the bag to coat the meat I try to inflate the bag slightly, makes it easier to get an even coating on each piece. I would take the flat side of a 2x4 and smack the top of that bail it should spread a tad so ya can get the lid on.

"Shake-n-bake" bag for the meat? Somehow I don't think cowboys on an open range do that nor use beef stock. We season and brown the meat in the dutch oven and then add water and the other ingredients. You might enjoy reading, "The Chuck Wagon Cookbook" by B. Byron Price. I bought a similar cookbook years ago. Been cooking over an open fire for 40+ years.

But it’s not nearly as much fun
Looks good, but with high blood pressure, way to much salt.
We usually don’t cook with much salt. Our homemade stock has no salt in it. You can definitely cut back on the amount of salt you use in the recipe.
