If your Tea vision ran out during the chase, you can either buy the tea from Tifa, make & drink it to refill your Tea vision or simply wait till next day (your Tea Vision will refilled).
Then GO BACK and MOVE THE ROCK on the tunnel, they'll be there waiting for you.
MUST go back through the ROCK

hey how's it going? I wanted your help, I played this part but I ended up losing sight of the monster and because of that I can't find him anymore, I went to the little house next to the bathhouse at 5:30 pm but he's never there, the monster no longer appears to me, what do I do? I'm already on day 9 and so far this demon hasn't appeared
You need to went to the little house through the rock
Or wait at sujin boat at 5.30 again to redo the whole thing

I guess it's just bugged if you don't follow it right away. I'm having the same problem. I can't find it again and it's not at the house.
I lost sight too, spirit vanished and when i try to go through tunnel its an invisible wall i think my game is glitched and i cant fix it =/
sometimes there is a invisible wall at the tunnel, you can go to the tunnel from the other side (near the tea field and the temple).
my spirit vision ended after the chase so i couldnt enter the passage, i tried to enter the passage the next day but i couldnt get the spirit cutscene at all

I figured out that I had to redo the quest the next day! I went back to the boat at 5:40pm and the spirit came back and I was able to redo it :)
i just ran a test, you don't have to redo it, you can either buy the tea fr Tifa, make & drink it to refiill your spirit vision or simply wait till next day. Then go to the tunnel move the rock, they'll be there waiting for you.
