Use worldedit it's easy.
do
You can create the base using a cylinder. Do
//cyl sand 70 50 roughly
Then, fine tune the shape by using a brush
//br sphere sand 5
/mask 0
Then move around giving it the shape you want, letting the sand fall down.
Then, use /br smooth 5 to finish the shape.
Flatten the top by using //cyl air 100 10, standing on top.
Select everything and do //replace sand grass_block
Set the tick speed up to allow the grass which has a block on top be turned into dirt.
Then do /dirt replace 80%stone,10%cobblestone,10%andesite
Do /br 80%mossy_stone,20%mossy_cobblestone 5
/mask stone
To move through and give it the spots it has.
Replace the top grass blocks with the shape you see in the video. Done
